Keep in mind that out of the 30 people, not all will eat a regular size portion, most will sample or pass by it. You can prepare any one of these; Cole slaw, carrot salad, broccoli salad, potato salad, baked beans, green bean casserole, potato skins with sharp cheddar and chives, fried salmon cakes. There are plenty of things you can prepare without spending a fortune doing them. If time is your enemy as it is to so many of us, try your grocery stores deli or Wal Mart, they have delicious ready made deserts of carrot cake or a crab salad that is an excellent choice and is always loved. Don't let the holidays get you down, a lot of people use ready made foods for functions or their get together. Hope I've been of some help, have a merry Christmas.

That's a good question, since Meatball subs aren't exactly light (heck, the last one I had, you could anchor a boat with!!) I'd stick with something that balances out the heaviness of the sandwich.......A Caprese salad (sliced tomatoes, basil and sliced mozzarella cheese) would be nice, or you could throw together a Cesar salad, not too fancy, just romaine lettuce and some bottled Cesar dressing......Beer would be a good drink with the meatball subs......Enjoy them!!!!

maybe try a light salad such as a green bean salad or serve pickled veggies l(ike cauliflower, carrots onion mix) on the side for a change up.

************SPRING PEA SALAD
1 head cauliflower, cut in sm. pieces
1 c. chopped cashews or sunflower seeds
2 tbsp. pimiento
10 oz. frozen peas
1 c. diced celery
1/4 c. crisp cooked bacon, crumbled
DRESSING:
1/2 c. sour cream
1/2 tsp. Dijon mustard
Mix with 1 cup prepared Ranch dressing. Toss, chill and serve.
*********CUCUMBER & VIDALIA ONION SALAD
4 cucumbers
Salt
2 onions (Vidalia), thinly sliced
DRESSING:
1/3 c. sour cream
1/4 c. sugar
1/3 c. white vinegar
Peel cucumbers, slice thin. Toss. Let stand in refrigerator for 1 hour. Rinse and drain. Add onion. Pour dressing over salad and toss. Chill at least 3 hours.
*******CORNBREAD SALAD
1 (16 ounce) package corn bread mix
10 slices bacon
1 (1 ounce) package ranch dressing mix
1 1/2 cups sour cream
1 1/2 cups mayonnaise
2 (15 ounce) cans pinto beans, drained
3 tomatoes, chopped
1 cup chopped green bell pepper
1 cup chopped green onion
2 cups shredded Cheddar cheese
2 (11 ounce) cans whole kernel corn, drained
DIRECTIONS
Prepare corn bread according to package directions. Cool, crumble, and set aside.
Place bacon in a large deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
Whisk together the dressing mix, sour cream, and mayonnaise.
Crumble half the corn bread in the bottom of a large serving dish. Top with half the beans. Layer the beans with half of the tomatoes, green bell pepper, and green onions. Sprinkle with half the cheese, corn, bacon, and the salad dressing mixture. Repeat the layers. Cover, and chill at least 2 hours before serving.

Some roasted peppers with some sharp provolone cheese, or try some hot cherry peppers if you like the hot stuff. Some green and black olives are good too.
