As odd as Brother Manuel's delivery is, he made a valid point: The "immaculate conception" is the traditional term used to refer to MARY being conceived in her mother's womb without receiving the "stain of original sin". The same sanctifying grace that we are given in Baptism (in a remedial manner) was given to Mary at conception (in a preventive manner), so she would be a "worthy vessel" for God's incarnation.
But don't feel bad -- I'd wager that even the majority of Catholics (whose doctrine this is) think the IC refers to Mary's virginal conception of Jesus.
To answer your question, though: Joseph took Mary and Jesus into his home and treated the child as his own. In other words, Joseph adopted Jesus. At least THAT part shouldn't be confusing. Decent men of all kinds do that sort of thing these days, too.

Just like an adopted child becomes a son to the adoptive parent. Joseph became the father by marrying Mary and taking the roll. It was and still somewhat is custom today that way.
As far as the genealogy of Jesus being from the blood line of David it is also through the marriage of Mary and Joseph that Jesus is from the line of David.
God sent the Holy Spirit to place the seed in Mary for her to become pregnant. This was not through sex or she was a virgin then and at birth. Joseph had still received Mary as His wife to defend the sham full position she was in. It was customary to stone to death for Mary being pregnant out of wedlock while betrothed to Joseph.

Mary was married to Joseph. Therefore that makes Joseph His(Jesus) foster father.
Don't be confused, but Jesus and God the Father is one in the same.

Any man can be a father But it take's that one man to be Dad
saying that GOD is Jesus's Dad and Joseph was the father

Joseph was the earthly father that God chose for Jesus. Also keep in mind that Jesus is God. The Trinity (the whole one in three parts thing).

I quote the following verses of the Bible. If you have time go thru some of it. This is not a new question. It was there in the time of Jesus when He was walking on the earth. Even Mary and Joseph could not understand. Luk 2:48 And seeing Him, they were amazed. And His mother said to Him, Child, why have you done so to us? Behold, your father and I have looked for you, greatly distressed.
Luk 2:49 And He said to them, Why did you look for Me? Do you not know that I must be about My Father's business?
Luk 2:50 And they did not understand the word which He spoke to them.
It is not a difficult question. Someone who knows his own father will not be in dillema to understand who is the father of Jesus. He calls him as father. Father means source as it commonly defined and understood.
Jesus never called Joseph as His father never Mary His mother.
Joh 2:3 And when they lacked wine, the mother of Jesus said to Him, They have no wine.
Joh 2:4 Jesus said to her, Woman, what do I have to do with you? My hour has not yet come.
Joh 2:5 His mother said to the servants, Whatever He says to you, do it.
Here in the verse we see Mary not identify Jesus as her son. By this time she had the understanding that Jesus is not her own production with her natural effort.
Jesus was also not called Mary His mother as before.
Luk 1:35 And the angel answered and said to her, The Holy Spirit shall come on you, and the power of the Highest shall overshadow you. Therefore also that Holy One which will be born of you shall be called Son of God.
Mary accepted this truth instantly but applied it hardly in the process.
Joh 19:25 And His mother stood by the cross of Jesus, and His mother's sister, Mary the wife of Clopas, and Mary Magdalene.
Joh 19:26 Then when Jesus saw His mother and the disciple whom He loved standing by, He said to His mother, Woman, behold your son!
Joh 19:27 Then He said to the disciple, Behold your mother! And from that hour that disciple took her into his own home.
On the cross Jesus declared Mary as not his mother rather He said John to call Mary as his mother and take care of her.
Therefore, one should convinced Mary was not the mother of Jesus and Joseph was not His father. As Joseph and Mary understood this truth hardly, any one in the age of science and reasoning accept it without iota of doubt and hesitation. This is the truth. He should called the Son of God. (Luke 1:35)
