Buy the Canon flash that is TTL compatible with your camera. TTL is really Flash Metering Off the Sensor - in other words the camera controls the flash duration. (Minolta invented this with the introduction of their X-700 and X-570 cameras in the late 1970's, early 1980's, along with their PX line of flash units such as the 280PX, 360PX and the Auto-Macro 80PX). This allows you a lot of creative control, especially when you need an f-stop of, say, f11 to maximize Depth of Field when photographing a group.

There are numerous after-market flashes available but IMO staying within the Canon family is worth the extra $$$.

It should have at least a tilt head for bounce flash. If it also swivels, even better. If Canon offers an off-camera flash bracket buy it with the flash.

You should get the most powerful flash offered. The higher the Guide Number (GN) the better. The GN is a way of telling you the unit's capabilities. Suppose a flash has a GN of 25 meters (approximately 82 feet) at ISO 100 at f1.4. This flash has more than enough power for bounce flash use. (Bounce flash gives a softer, more pleasing look to people photos.) If your lens has a maximum aperture (f-stop) of f2.8 you can simply double the ISO and still get good results at 25 meters.

If you decide to stray from Canon and look elsewhere for a flash be very careful comparing the GN's of different units. Some manufacturers will use a higher ISO to boost their GN. If the ISO and f-stop aren't specified then the stated GN is probably bogus.

The Canon 430EX will cover most of what the average photographer would need. A few differences with the 580EX it has a little more power and if you use Canon's wireless system (which isn't that great) the 580EX can be a master. You also get a sync port on the 580. For the extra money for these few things, the 430 is your best value.

A diffuser to add onto the flash wouldn't be a bad idea either.

Either the 430EX Canon Speedlite...or the better, 530EX Speedlite. Neither is cheap, though.
The 430EX would be all you need for the XTi.
