I want to know if you can take a HDMI cable and "split it" (for lack of a better term) it into a HDMI video lead and component audio (the red and white cables). Is this even possible?

The video part is 'easy', just use HDMI to DVI cable and you just get the video part.

Audio in HDMI is DIGITAL and can be both uncompressed (PCM) or compressed (Dolby, DTS, etc.), 2-ch or 5.1ch, so no way to get analog audio without a converter.
However, EVERY device that outputs audio via HDMI also outputs analog audio via two RCA plugs. So if you have a DVI input only, you can get both video and separate audio.

You'd need a filter to decode the line and split the signals, it's digital so you can't just fork one of the lines. Sure it can be done but I'm unaware of costing.
