I guess water doesn't so much go stale as it just gets gets kind of funky if you leave it open or some kind of bacteria begins to develop on the container it's in.

Yes its fine.
The only reason that there is a date on a bottle of water is not for the water going bad but its for when the container will break down.

After leaving a glass of water overnight for drinking, it tasted like it was burnt and smoky. Then again, the house and air filtering around it is of a lower quality.

The water can gather mold and staleness due to bacteria and crap but, no, it doesn't itself go stale, depending on what you have it in, which again, would go back to the former idea anyway.

yes water does go stale especially if you leave it out in a glass or something for a couple daays you will eventually see black things floating around that look like mold
