It depends upon what type of apples you mean. Red doesn't tell us what type they are. Some apples are better for fresh eating (waldorf salad); some are better for sauce (use cinnamon imperials instead of ground cinnamon and the sauce is a pretty pink color) and then others are best for baking (pies, crisps, dumplings or just baked apples). If in doubt, you can sauce them by peeling them, add some water (you can always add more if they're high in pectin so the sauce is too thick), bring them to a boil then simmer for 15 - 20 minutes. You can use a wooden or plastic spoon to press the pieces against the side of your saucepan. When they seem soft enough, take off the stove and add some sugar and cinnamon (or the red hots mentioned above).

Crunchy Carmel Apple Pie
1 pastry crust, deep dish 9 inch pie (homemade or store bought)
1/2 cup sugar
3 tablespoons flour
1 teaspoon ground cinnamon
1/8 teaspoon salt
6 cups thinly sliced peeled apples
1/2 cup chopped pecans
1/4 cup caramel topping
Crumb Topping:
1 cup packed brown sugar
1/2 cup flour
1/2 cup quick cooking rolled oats
1/2 cup butter
Crumb Topping: Stir together brown sugar, flour, rolled oats. Cut in 1/2 cup butter until topping is like course crumbs. Set aside. In a large mixing bowl, stir together the sugar, flour, cinnamon and salt. Add apple slices and gently toss until coated. Transfer apple mixture to the pie shell. Sprinkle crumb topping over apple mixture. Place pie on a cookie
sheet so the drippings do not drop into your oven. Cover edges of pie with aluminum foil. Bake in a preheated 375F oven for 25 minutes. Then remove foil and put back in for another 25 to 30 minutes without foil. Remove from oven. Sprinkle pie with chopped pecans then drizzle with caramel on top. Cool on a wire rack and enjoy warm or at room temperature.

I'm a chef and this is a really easy answer for me.
You can do a gourmet simple dessert with red delicious apples.
Chop cookies still their crumbs, after that grab an apple and cut trough the half cut the middle of the apple and make a little circle in the middle of the half apple. then put the cookie crumbs in the little hole for the apple (the hole should be about 2 inches.)than put honey, and cinnamon in the hole with the cookie crumbs...Finally put the apples in the oven abut 1o minutes 350degrees. you can make the dessert with peaches too.
if u have cream you can top it with it.
Enjoy as much as I do.
It's a real gourmet and simple dessert

Core tehm and fill with a mixture of butter and brown sugar. Place in baking dish and bake until cooked through. Perhaps 35 mintues at 300 degrees. Watch them. When the skin gets wrinkly and they can be easily peirced with a fork they are down.
Or find a simple recipe or apple crunch/crisp.
Or core and then slice into segments like and orange. Drizzle with caramel like for ice cream topping and then add whipped cream.

you can use red apples for pies aswell, they will taste different though, but nice.
other things you can do with apples are:
maindishes:
apples, unions tomato liver and chili, simmer in butter for 45min (delicious)
baked apples with blood saussage. (also delicious :d)
greenbeens with garlic and carmalised apple.
sidedish:
apple pure, cut the apples into tiny bits, cover them in water, boil them to mush, add raisens and currents, a bit of sugar, and cinnamon. keep on a low fire til it thickens. (serves great with meats. grilled chicken especially.)
or a desert,
icecream with carmalised apples.
to carmalise apples, heat up some sugar in a pan so that itll melt. add apple rings or cubes, w8 for the apples to obsorb the caramel.

Some red apples can be baked (like Rome), others cannot (like Red Delicious)
I'd suggest cutting into wedges, soaking in lemon and water for a bit (to prevent browning), then serve w/ a choice of melted chocolate and warm caramel fondues.
