Years ago my mother used to make something she called
Lemon Crumble. They were like lemon bars with shredded coconut on top, not very high maybe 3/4". She's gone now and I can't find that recipe anywhere. Would anyone have a comparable recipe you would be willing to share? Thanks in advance.

3 cups flour
1 cup coconut (ground)
1/2 lb butter (no margarine "or" shortening please)
1 cup white sugar
1 (3 1/2 ounce) package lemon flavor instant pudding and pie filling


Combine butter, coconut, sugar, flour until mixture is crumbled.
Press half of the crumble in a long ungreased pan (9x13-inch).
Prepare lemon pie filling as directed on box then pour over the pressed crumble.
Add the remaining crumble over the lemon filling.
Put in oven at 325F for a few minutes until the top of the squares are golden brown.
(about 10-15 minutes) Take out and let cool in refrigerator.
Cut into squares and serve.

Ingredients
Vegetable cooking spray
2 cups finely crushed low fat cinnamon graham cracker crumbs (about 50 crackers)
3 tablespoons butter or margarine, melted
2 (8-ounce) packages fat free cream cheese
1 (14-ounce) can EAGLE BRAND®® Fat Free Sweetened Condensed Milk (NOT evaporated milk)
1/4 cup frozen orange juice concentrate, thawed
4 egg whites
1 teaspoon grated orange rind
Instructions
Preheat oven to 350º. Spray 13x9-inch baking pan with cooking spray. Combine graham cracker crumbs and butter; press firmly on bottom of prepared pan.
In large mixer bowl, beat cream cheese until fluffy. Gradually beat in EAGLE BRAND.
Add orange juice concentrate, egg whites and rind; mix well. Pour batter into prepared pan.
Bake 25 minutes or until center is set. Cool. Chill. Garnish with fresh fruit, if desired. Refrigerate leftovers.

1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter or margarine, melted
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 (14-ounce) package flaked coconut (5 1/3 cups)
1 egg white
1 cup whole almonds
1/4 cup brown sugar
1 tablespoon grated orange rind, divided
1 teaspoon freshly squeezed orange juice
1/8 teaspoon ground cinnamon

Preheat oven to 350°F. Lightly grease 13x9-inch baking pan with non-stick cooking spray. In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of prepared pan. Bake 10 minutes or until lightly browned. Cool slightly.
In medium bowl, combine EAGLE BRAND® and coconut; mix well. Spread mixture over crust.
In small bowl, whisk egg white until frothy. Add almonds and toss to coat. In separate bowl, mix brown sugar, 1 teaspoon orange rind, orange juice and cinnamon. Add almond mixture and stir well to combine, until sugar is moist and mixture coats each almond.
Sprinkle almonds on coconut layer. Bake 15 to 20 minutes or until tips of coconut begin to brown and almonds are lightly toasted. Cool slightly. Sprinkle remaining orange rind over top of bars. Cool completely. Cut into bars. Store leftovers covered at room temperature.

1/2 cup lemon juice
3 egg yolks

Preheat oven to 350°F. In large bowl, combine cake mix, butter and 1 egg with mixer until crumbly. Stir in cracker crumbs. Reserve 2 cups crumb mixture. Press remaining crumb mixture on bottom of greased 13x9-inch baking pan.
Bake 15 to 20 minutes or until golden.
With mixer or wire whisk, beat EAGLE BRAND®, lemon juice and 3 egg yolks. Spread evenly over prepared crust. Top with reserved crumb mixture.
Bake 20 minutes longer or until set and top is golden. Cool. Cut into bars. Store leftovers covered in refrigerator.

1/2 cup firmly packed dark brown sugar
3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup oatmeal, quick-cooking, uncooked
Instructions
Preheat oven to 350°.
In bowl, whisk EAGLE BRAND and lemon juice; set aside.
In a large mixing bowl, cream butter and sugar together. With a pastry blender, combine flour, baking powder, salt and oatmeal. Mix thoroughly.
Spray an 8x8-inch baking pan; line with parchment paper. Spread crust mixture into pan and pat down. Pour filling over crust.
Bake 35 to 40 minutes or until brown around the edges. Cool in pan at room temperature for 30 minutes.
Cover and cool completely in refrigerator before cutting.

i copied a few good recipes for you if you moms like me she probably alter the recipe to her liking. some of these you could just add the coconut to them. hope you like them, enjoy.
