Butter or stick margarine work. You have to be careful with the margarine, though, it can't be too high on the water content.

I normally use butter and vegetable oil, because the texture of the cookies is better than with shortening. You can taste a difference but it is a good one!

Butter or veggie oil will suffice for the substitution for shortening. Butter will make them more rich and much more tender.

i make cookies all the time i replace the shortening with butter!the same amount .

Butter works great and tastes better. Regular margerine is ok but I don't recommend it. Low or no-fat margerine will NOT work, they are mostly water.

im pretty sure you can use applesauce instead. i use applesauce instead of shortening all the time in my cakes. i also use it in my meatloave instead of eggs. you cant taste it, it just makes whatever your baking moist and its better for you then all that oil or shortening. but i never tried it in cookies so try it and let me know
