FRESH STRAWBERRY PIE

INGREDIENTS
4 cups fresh strawberries
1 1/4 cups white sugar
1/2 cup water
1/2 teaspoon cream of tartar
3 egg whites
1/8 teaspoon salt
1 teaspoon almond extract
1 (9 inch) prepared graham cracker crust
DIRECTIONS
Wash and hull strawberries, slice into quarters.
Place sugar, water, and cream of tartar in saucepan, bring to a boil over medium heat. Cook, uncovered, until a small amount of mixture forms a soft ball when placed in cold water.
Beat egg whites and salt until very stiff. Stir in almond extract. Pour hot syrup slowly into beaten egg whites, beating constantly until thick and glossy. Spoon over strawberries in shell. Chill and serve.

OUR FRESH STRAWBERRY PIE

1 qt. or 2 lbs. fresh strawberrries - hulled and halved (cut more if they're big berries)
2 Tbs. cornstarch
1/2 cup sugar
1 - 2 Tbs. lemon juice - dependent upon how sweet the berries are
1 pie crust

Put half the berries in a medium saucepan and crush (Iuse a clean jar) to bring out juice and make them into smaller pieces like jam. Stir cornstarch and sugar together (this lets you avoid the cornstarch making lumps). Add this and the lemon juice to the saucepan. Bring to a boil, stirring often. It's done when the cornstarch cooks and turns clear. Let sauce cool. Stir in the other half of the berries. Pour into graham cracker crust or a regular baked pastry shell. Refrigerate at least 2 hours. Serve with Cool Whip.
