I know this one. Don't let your dough rise at room temperature. Make your dough and immediately put in the refrigerator for 24 hours. It wont be so elastic.

If its a pastry or cookie dough try sprinkling it lightly with water on both sides trying to even out the flour. If it doesn't work put it in the freezer on a cookie sheet for five minutes between wax paper and try to roll it out again. But don't leave it in there too long.

is tthis for bread or a pizza base, or pasta? if it is pasta, then just keep rolling! eventually it will stay out. patiencce is the key. i nearly broke my back the first time i made homemade pasta, but its worth it! for a pizza dough it shouldnt be too hard to roll out. i dunno bout bread though. with pasta make sure it is almost transparently thin. oh, actually, if you have a large lump of dough, break it in 2s or 4s and do each little bit seperately. its easier that way. and make sure you have a good rolling pin or watever.

you need to add a sprinkle by srinkle measure of flour to it.. Experiment..unitl it is not so elastic but yet not too floury, then put flour on rolling pin and roll it out... parchment paper to roll it on is good as it won't stick or wax paper too..also chill your dough flash freezer like for about 10 minutes or less

The dough needs to rest, as you've obviously overactivated the naturally occurring gluten in the flour that you used......next time, let the dough rise (as directed in your recipe), punch it down, let it rise a second time and then punch it down again, and then let it "rest" for about 30 minutes to relax the gluten strands......you'll notice that it isn't as elastic when you allow the dough to relax some......Enjoy!!!

oil your hands and counter flatten the dough on the counter. Then pick it up with your hands and work the outside edge pulling and stretching and letting gravity help. you Can also toss it back and forth between your hands (like a pizza)
Depending what your using it for...don't over handle it as it will make it stiff and not rise properly

put flour on the surface your going to roll it out on.....then add alittle flour to the dough until "its not so sticky" not to much though........use your best judgement. Hope it "rolls out" right:)
