I like to steam it after I've cut it into large flowerettes, then add a little Cheez Whiz when serving. Don't steam it too long or it gets mushy. I either steam it in the microwave (if I'm only making one or two servings) or on top of the stove. Either way, don't use too much water or it takes away some of the beneficial nutrients. I can't tell you how much time because it depends upon quantity.

Here's a nice change from the heavy sauce recipes (which I also love):

Cauliflower with Tangy Sauce

1 medium cauliflower, broken into flowerets
3 Tbs red wine vinegar
2 Tbs melted butter
2 Tbs chopped red bell pepper (or use roasted red pepper)
2 Tbs chopped green bell pepper
1 tsp sugar
1/4 tsp salt

Steam cauliflower for 8 to 10 minutes, until crisp-tender.

Meanwhile, combine all other ingredients in a small sauce pan.
Cook over low heat for 5 to 7 minutes.

Drain cauliflower.
Pour sauce over hot cauliflower.

Cut the cauliflower into bite size pieces. Wash them off and spin them in your salad spinner. Heat oil in a pan until a drop of water splatters. Put the cauliflower into that oil and cook until brown. Make sure to put them on paper towel to absorb the excess oil. Salt to taste. This is better than french fries!

CARROT AND CAULIFLOWER MEDLEY

About 8 lg. carrots, peeled
1 lg. head cauliflower
Boiling salted water
2 tbsp. butter
2 tbsp. flour
1/4 tsp. Dijon style mustard
1 c. regular chicken broth
1/2 c. whipping cream
1 1/4 c. shredded Swiss cheese

Cut carrots into 1/4 inch diagonally, 4 cups. Break cauliflower into flowerettes. Cook vegetables in boiling water until just tender. Plunge in cold water, drain. In another pan melt butter, stir in flour and mustard. Cook until bubbly. Remove from heat. Gradually stir in chicken broth and cream. Cook until thickened. Gradually add 1 cup cheese. Stir until melted, combine vegetables and sauce in 2 quart casserole. Sprinkle with remaining cheese. Bake uncovered at 350 degrees about 15 minutes. May be refrigerated ahead and then bake 35 minutes.

I eaten steamed, roasted and fried, and all three are delicious. In the end, its a matter of taste. You can steam it and serve it with a cheese sauce. You could roast it in the oven with oil and then serve it with a grainy mustard sauce or bread it and fry it.
