RE Driving Friends' cars with no insurance?
I have no insurance, but if it is true that insurance covers the car, not the driver, would I be safe driving my friends' cars with their permission, despite the fact that I *personally* have no insurance? Is it also true that if I wreck their car, would their insurance company go after me personally, and sue me, when they would normally go after my own insurance if I had it?

the owner of the car is insured to drive that car through his years of driving etc.If you have insurance then you can drive the car on a basic cover but would not cover repairs to your friends car only to someone you hit.
As you have no insurance you cannot drive this car as said your friend is insured for that car so only he can drive it with full cover and you cant.
Else a 17 year old driver would be driving a Buggati as his friend is insured on it.

Unless your friends insurance covers anyone who operates his car, you are driving as an uninsured driver. Think about it. Why would an insurance company cover people driving a car they insure without getting paid for the privelege? My insurance (State Farm) covers me in any car I drive and anyone over 25 years old that I allow to drive my vehicles.

Insurance follows the vehicle, not the driver. Assuming that your friend had full coverage and you were not explicitly excluded on his policy (by name, age, etc.) then you'd be fine as long as you had his permission or reasonably believed that you would have his permission to operate the vehicle.
If you were to wreck his car, his insurance would pay for the damages exclusive of the deductible amount. They would not attempt to recover from you unless you either were operating the vehicle illegally (such as drunk) or did not have his permission to operate the vehicle. Of course, you should cover the deductible for your friend if you wrecked his car.

Make sure your friend has full coverage, not liability only. If you wreck his car and he has liability only, you will ending up fixing or replacing it.
