I saw on Rachel Ray that you bend the asparagus till it snaps. That's where you should cut the asparagus. What do you do with the "bad" part? thanks so much.

Throw it away for use for vegetable stock.

I throw it in with other veggies for making veggie stock, or use it to make cream of asparagus soup-just simmer the tough stalks in veggie stock, then puree the whole lot, add some fresh cream, seasonings and herbs, and you have a lovely soup.

Makes good cream of asparagus soup, for flavor only cause they are too tough and woody to eat. You will need some of the tips as well for garnish.

If I had a family of one to 4
I would put them in a blender to chop to add to a cream of potato soup - stew and add the stalk of broccoli and cauliflower as well and any left over celery spice it up with Italian herbs and butter and a dash of pimento for color nothing from stopping me from adding clams or diced chicken
but I trash them

I Throw all my unused veggies in the compost bin out back. Enriches the soil.

Save most of your vegetable "trim" and use it to make vegetable stock. Yes, you'll be "trimming" quite a bit but that's the way the stalk grows!

It's very woody tasting. I just throw them in my trash. They don't even break down well to use in a compost pile.

You could try to cook them and then blend them for soup. you could also freeze them and use them when making a veggie stock.
