Ice wine pairs well with very rich foods, such as creamy cheeses or foie gras. I, personally, prefer it as a desert wine on its own.
They're definitely worth trying. Also, if you like them, you may want to try the poltorak style of mead. Common varieties include Jadwiga, Kurpiowski and Kastelanski. They're relatively similar to white ice wines and are such a wonderful desert drink
You may also want to try Iced Cider from Quebec. I tried it for the first time this year, it's made in the same way as ice wine, except from apples. I'm totally in love with it.

Some places will artificially 'frost' the the grapes by chilling them in a freezer. The effect is similar to a normal frost.

I love ice wine, they are more expensive, due to mother nature, a cold snap could cause this to happen to the grapes, and must be picked right away, causing a different flavor for the wine.
