When we do event planning and catering, we figure that MOST people (split between women [who usually eat less than guys] and men) will consume about 4-6 ounces of the meat course, and I'm assuming that you're going to have side dishes (potato salad, chips, drinks, salads, dessert etc.) But remember, too, there are heavy eaters.......I'd say that 50 people would consume about 15 to 20 pounds of cooked brisket, remember, brisket does shrink somewhat in the cooking process......and you'll have some leftover to serve on hot summer nights when you don't feel like cooking......Enjoy!!

I'm a Banquet Chef, and I do these calculation all the time. This is what you'll need if you want to be sure you don't run out. I would plan on 1.5 pcs of chicken per person, if you are buying it already cut, it comes in pack size of (16 whole chickens, cut 8 way which equals 128 pcs) If you are cutting your own chicken you will need about 20 chickens cut 8 ways would equal= 160 pcs. a average chicken wieghs aprox 2.5lbs. 20x 2.5#=50# of chicken total needed. For the Brisket you will need .5lbs cooked per person, which when smoking brisket you will loss aprox 30-40% of the wieght of the beef and a additional 10-20% in fat and trim, So you will need 1# of Raw Beef brisket per person. which would be 100#, and after you smoke it, slice it and pan it you will Have over 50# of edible product. The Ham, this will be the the least consumed product so you wont need as much I would recomend 30# and you should be fine. Please take into consideration your side dishes, the demographic of the party you are cooking for and the timing of the event? how hungry are they going to be? Is it a lunch event for 100 elderly ladies? or is it a all you can eat buffet for 100 lumberjacks that have been working all day? Please feel free to contact me if you need any further information.

Depends on how well you want to feed them.
Brisket is pretty fatty, so I'd figure 8 ounces of brisket would have the feeding capacity of a quarter-pounder hamburger.
If it were for the in-laws, 25 pounds is certainly sufficient, but if it's for *my* side of the family, or my friends or my clients, I would get 50 pounds.
Actually, if I was going to barbecue it, using my sauce, I might get 75 to 100 pounds of brisket. People really like my recipe, so they eat a lot, and if there are a couple of pounds left over, it freezes well.
Three ounces of brisket per person? That's absurd. That's like trying to feed a crowd with *one* White Castle burger apiece.
You'll want to get about 5 big heads of cabbage, though; you're going to need a lot of creamy cole slaw.

You generally allow 1/2 pound of any meat per person. So for 50 people you would need 25 pounds of brisket. Mind you if you are serving a lot of vegetables, potatoes, rice, salad, you don't need quite as much.

I would expect people to eat about a half a pound a piece, so 25 to 30 pounds should be good.

A good rule of thumb chefs go buy is the 1\2 pound of BONELESS meat per person. Also if you are serving a big eating crowd. So I would say a little over half just to be sure.

25-30 lbs. raw brisket; this will yield 50+ (3 oz.) servings, once trimmed, cooked, and sliced. 3 oz. is an ample quantity w/ other side dishes to complete the meal
