Depends a lot on what you´ve done and who the captain is.
Cruise ships have "prisons", or holding cells.
Usually if you got too drunk and had a fight, they disembark you right way, next port and repatriate you (usually they hold the first 2 weeks of your salary for that, they gove you the money at the end of your contract), some cases they force you to work until you can pay for it.
If it happens in the US and you are not american, they have a private security company escort you till you board you flight.
A few years back I was on Island Escape (shitty ship) and we were in Tangier, Marroco and a clandestine came onboard (all this was the captains fault, not the security officers, and the capt was eventually fired)... anyway we left Marroco and in the middle of the night they found the guy wondering around, he had no passport, no ID, nothing.
Next stops were Portugal (Lisbon), Portugal (Madeira) and Spain (Canaries) and no country accepet the guy.
The major problem was that we were going to Brazil, where the authorities would never accept him... The Capt, Staff Capt, Purser, all of them were histerical.
They placed the guy in the Infermary, cause he was not dangerous or anything.
I remember we all stoped by to say hi to him all the time.
I was shop manager and sent him chocolate and pringles...
Anyway, they managed to bride Cape Verde authorities into taking him in... it was our last stop before Brazil, where we were staying for 4 months.
Poor guy, tryied to escape a poor life in Moroco and ended in an even poorer country in the middle of the Atlantic.
The correct action would hve been to return to Moroco to leave him there.
As I said, Capt Hesp was eventually fired for that.
Anyway, they fire drunk people all the time.
Happens a lot, there´s a lot of stress working on a ship, pressure for profit, long hours, people drink. A lot.
Also, sometimes for breaking rules, stealing, etc.
If you are in the middle of a transatlantic crossing or something like that, usually they will make you stay in your cabin until you reach port.
I forgot, when you sign in on any ship, they hold your passport, to avoid people from jumping ship in any country...
It´s a big plus when you have more than one...

This sounds like a question that you would have answered for you before you sign your job contract. I am sure they will explain what happens if you break the contract by not working or disappearing from the ship. I suspect that if you just quit between ports they would escort you and your belongings off at the next port.
