Alot of the times, when roasting a pig, people will stick a piece of wood in the pig's mouth to keep it open. Keeping the mouth open during roasting,helps prevent it from drying out. The wood is used while roasting rather than the apple so the apple doesn't get all nasty during the roasting process. Then when the suckling pig is done, they take the wood out and replace w/ an apple, or an orange.

The apple, and yes, sometimes an orange, is a tradition. Although the Hungarian tradition is a 4 leaf clover. And the plate is often decorated around the edge w/ bay leaves.
