I know the forms like: June 21, 2007; 21st of June; 21 june 2007; etc, but what about using "in" like above?

If you are referring to the month NOT the day this will be correct, otherwise; just stick to the prep.:;'of'

No way! The only time you use 'in' is with age: she will be 9 in July means she will be nine years' old in July.

No,one would say the 9th,(ninth) OF July.
