Blackberry Ice Cream
Ingredients:
3 cups sugar
3 tablespoons all-purpose flour
1/2 teaspoon salt
10 cup half-and-half
8 large eggs, beaten
1 teaspoon vanilla extract
4 1/2 cups fresh or 1 (1-pound) package frozen blackberries
1 1/2 cups sugar
1 tablespoon fresh lemon juice
Garnishes: fresh mint, fresh blackberries
Preparation:
Combine first 3 ingredients in a large Dutch oven. Whisk in half-and-half. Bring to a boil, stirring constantly, over medium-high heat.
Slowly whisk about 4 cups of hot mixture into beaten egg. Add egg mixture to remaining hot mixture, whisking constantly, until mixture reaches 160°. (Immediately remove it from heat to prevent curdling.) Let cool completely, stirring occasionally. Stir in vanilla; chill 8 hours or overnight.
Combine blackberries and 1 1/2 cups sugar in a separate bowl; stir well. Cover and chill 8 hours, stirring occasionally to dissolve sugar. Stir in lemon juice.
Stir berry mixture into custard mixture. Pour into container of a 4-quart ice-cream maker. Freeze according to manufacturer's instructions; if recommended, pack freezer with additional ice and rock salt, and let stand 1 hour before serving. Scoop into serving bowls; garnish, if desired.
Note: To hasten cooling of custard mixture, partially fill sink with ice water to come about halfway up sides of Dutch oven. Let pan remain in ice-water bath, stirring often until room temperature; chill.
Yield
Makes 1 gallon
Whipped Cream Icing
1 teaspoon unflavored gelatin
4 tablespoons water, cold
1 cup heavy whipping cream
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
Combine Gelatin and Cold Water in small saucepan.
Let stand until thick.
Place over low heat, stirring constantly, just until Gelatin dissolves.
Remove from heat and cool, but do not allow to set.
Whip Cream, Sugar and Vanilla until slightly thickened.
While beating slowly, gradually add Gelatin to Whipped Cream mixture.
Whip at high speed until stiff.

You can make this fat free too...use fat free ingredients
2 cans of condensed milk
1/2 gallon of milk
Instant pudding mix (I use the big box)
Mix all the above and put them into your ice cream maker. Since you don't have an ice cream maker....you can always stir this by hand in a cold sink filled with ice. Its difficult, but I have done it. Its easier to by a machine. 20 bucks at target or bed bath and beyond.
As the ingredients start to thicken in your ice cream maker. Add your fruit, nuts, candy, etc. Its important not to mix it all up front, unless you are using frozen fruit, but even then, I wait to add.

Sure, Its a really nice thing when you are able to show off your own combinations. Ive tried with some ethnic fruits and vegetables (jicama, cucumber etc) For summer i like really fresh ones like Carrot cucumber, coriander, hibiscus. When using them in a 4 or 5 course meal, then a creme brulee ice cream, cheese and grapes..

Your best bet would to be to go buy an ice cream maker, they normally have an ice cream cook book in the box. I bought one by Sunbeam and there was one in there.

Go buy yourself one of those ice cream balls where you put in all the ingredients it says to and then you kick that sucker around..in the end you get lovely ice cream!! Plus it works off the calories before you even put them into your body..BIG TIME BONUS...YYYEEEEEEHHHHHAAAAWWWWW!!
