If a person is born in Mexico they are considered a citizen of Mexico. It's like the US when a person is born in the US they are a citizen. Many countries have this policy.
However since you are a US citizen I would advise you to go to the US consulate or when you come back to the US, to do the proper legal work so your child is a US citizen.
Your child is technically a dual citizen.

The child should have dual citizenship (untill the age of 18). The parents are American according to our laws that makes the child American since it was born in Mexico it would also get Mexican citizenship.
