I guess it depends upon whom I am offering thanks too. If it is to the Fey (fairies) then it is usually by leaving some form of natural food (i.e. soy nuts) where I think they will take it from. If it is another person, then I try to do something nice for them or at least let them know how much I appreciate what they have done for me. If it is a God or Goddess, then I would do a ritual in His/Her honor. That and every forth full Moon, I make a wish for that I would like to bring into my life but on the same paper and above it, I list the blessings which I am thankful for.

It's more a daily routine than anything else.
If we've got stale bread, old eggs, picnic scraps (etc) we position them for the inner-city wildlife as a "gift to the goddess in the form of ants/crows/possums/etc)
Watching a little 5 year old saying that while shakeing out the picnic blanket ammused the (then) preschool teacher.

most of the time it is a simple yet heartfelt act - i always offer a piece of my food and sprinkle some of my drink upon gaia and offer a sincere 'blessed be' to thank mother nature for providing the food and drink!
when i see 'my' buzzards, i offer blessings again to the ancestors, and consider it a good omen.
there are times when i have more time and i cast a small circle to sit within, light a candle and meditate a while.

Gift for a gift. :-)
The heathen way is to offer up a drinking horn full of mead or ale . . . I brew my own mead for ritual purposes, or will sometimes get a special bottle of ridiculously expensive bottle-fermented Belgian ale like Chimay.
Thanks are given, "hails" made, kennings offered . . . then it gets poured into an offering bowl on the harrow. Just simple like that.

Depends on what you're offering thanks for. A pleasant day, good meal, some fortune come your way.
A simple way is to merely say thanks and offer it up to the cosmos/Goddess/Whomever.
You can also burn a white candle with some frankincense on the side.
You can also offer thanks by providing the world with a gift of thanks such as an offering to a charitable organization, doing something nice for someone is another way.
Something as simple as listening to someone who needs a friend is a way to offer thanks.
You can do an elaborate ritual, but chances are the Powers That Be would prefer something light from the heart and acknowledgment for that which makes you thankful.

it depends really on the gift.
i have been a devotee of the Hindu Goddess Lakshmi and have decided to have her image tattooed on my left arm from shoulder to just above my elbow as a way of being grateful for her blessings on our lives.
although she is the goddess of prosperity, she has taught me that prosperity isn't material or monetary. it is much more important to be prosperous in desire to learn and grow and to give freely of kindness and love.
she is a hard way to go sometimes, but i hope this marking of tattoo will help the growth of my devotion to her.
i tend to be more of a kitchen witch, so often i make food or herbal offerings, or handmade things - especially knitted. knitted projects, consecrated in gratefulness, go to a local church that feeds children dinner - hats, scarves, and other things are always needed for someone.

I save a portion of my meals and bury it outside as an offering to the gods (when I can do so without much hullabaloo). I also try to say a few words at the start and end of every day to give thanks for life.

For an everyday offering I burn incense or a candle. Something special, I would draw a circle and find something that seems 'more appropriate' for the type of thing I was giving thanks for. It just depends.

i usually just give a hearfelt 'thank you' but if it's big, i make an offering to the earth... water, seeds, or food for the critters. in a thanksgiving ritual, i consecrate a libation and leave it under a tree.
