When I make stuffed peppers for my vegetarian friends, I use Morningstar Farms veggie crumbles. I mix it with cooked rice, corn (frozen or canned will work), the tops of the pepper (finely choppped) and some shredded carrots. I also add a little bit of tomato paste as a binder. Let the peppers sit with boiling water in them for about 1/2 hour to soften them before you stuff them and bake them. I hope you like them.

You make them by cutting the tops off of peppers, try to get some ribs out with a spoon. Now the mixture I know of is with ground meat and rice, You make some rice, traditionally you are supposed use the beef raw but I cook it cause I don't like the grease. after the beef is done I mix it the with the rice and some pasta sauce (this makes it taste really good instead of plain tomato sauce) salt, pepper, red pepper flakes, oregano. I use some minced garlic and mince onion mix it together in a bowl and put this mixture in each pepper which is in a baking dish then I pour the pasta sauce over all of them and cover with foil and bake in a preheated 350 degree oven for about 45 mins basting often. Cooking until pepper wilt but are still firm. good luck.

I like to take a mixture of ground beef, lipton onion soup mix & wild rice. Mix in large bowl, then add a little worchester sauce, mushrooms, dried cranberries & raisins. Add a couple of spoons of water & mix together. Stuff mixture into peppers and place on foil lined baking sheet. Bake @ 325 for about an hour. I like to serve with candied carrots & homemade rolls.......

Are scallions necessary for this?
Stuff with a mix of cooked brown rice, grated cheese, salt, pepper, spices, you could also mix in some salsa, but make sure the mix is not too runny. Clean and core the pepper, stuff it, bake. Why scallions?
