I love zucchini but i've have never tried to prepare it before? Any ideas on the best way to do that?

Baked Zucchini
INGREDIENTS
1 large zucchini, cut lengthwise then in half
1 (8 ounce) package cream cheese, softened
1 cup sour cream
1/4 cup grated Parmesan cheese
1 tablespoon minced garlic
paprika to taste
DIRECTIONS
Preheat oven to 350 degrees F
Bring a large pot of water to a boil. Add zucchini and cook until tender but still firm, about 15 minutes. Drain, cool and scoop out seeds.
In a medium bowl combine cream cheese, sour cream, Parmesan cheese and garlic. Spoon mixture into zucchini halves and sprinkle with paprika.
Bake in preheated oven for 10 to 15 minutes, or until heated through.

i enjoy zucchini a lot too and the best way I have found is to sautee it with some onions. It's also really good to add some yellow squash to the mix as it has a similar flavor to zucchini and if you're serving it at a dinner the colors look beautiful together.

You have to try Zucchini slice,it is a very easy delicious meal both for hot & cold weather.It is simple to cook as well,wash 2-4 zucchini's(depending on how many people) & then cut into slices & place in a greased baking dish,then add sliced onion & grated cheese.Place these in layerson top of each other untill near the top of dish.Make sure the last layer has cheese & then place a thin row of sliced zucchini on top & place in oven -(180 degree's & cook for 1 hour.With this recipe you can add what ever you like to it,some like to add bacon,capsicum,carrot,you get the idea,what ever you like is what you add to the zucchini.Serve hot or cold as it is nice hot in winter or as a summer snack with salad or just on it's own.

Steamed Zucchini

4 to 6 small zucchini, depending on size olive oil
1 clove garlic
juice of 1 lemon (about 1 Tbsp)
parsley (fresh, if possible)

Boil or steam the zucchini just until they are tender but firm. This is when you can stick a fork in the skin, but well before they get mushy.
Drain them and put them on a serving platter.
Cut each into quarters, the long way.
Mince the garlic and parsley together and sprinkle them over the squash (or use garlic powder and parsley flakes, if necessary).
Drizzle the oil and lemon juice over this. Scoop and slosh the "sauce" over the slices.

8 medium zucchini
Good olive oil
2 large yellow onions cut in half and sliced 1/2 inch thick
Kosher salt
Freshly ground black pepper
1/2 cup freshly grated Parmesan cheese

Remove the ends of the zucchini and, if they are large, cut in half lengthwise. Slice the zucchini diagonally in 1/2-inch slices. Heat 2 tablespoons of olive oil in a large (12-inch) saute pan and add the onions. Cook for 10 minutes on medium-low heat, until they start to brown. Add half the zucchini, 1 teaspoon salt, and 1/4 teaspoon pepper to the pan and cook, tossing occasionally, for 10 to 15 minutes, until just cooked through. Sprinkle with Parmesan and cook for 30 seconds more. Remove to a serving platter and repeat with the rest of the zucchini. Serve immediately.

Note: If you cook too much zucchini in one pan, you end up steaming rather than sauteing it. I prefer to cook it in 2 batches.

You want simple? Slice lengthwise. Brush with olive oil or Italian dressing and grill. Shish ka bob with other veg's Heat olive oil in a skillet, brown zucchini over medium heat. Just before removing from pan, sprinkle with a little fresh parmesan. YUM! Stuffed zucchini is great. More ingredients, though. So many variations on what you can stuff them with. Saute in pan with olive oil, onion, garlic and salt. When done, mix in sharp cheddar cheese. Not bad with a bit of fresh jalapeno as well. Use zucchini in veg soup or lentil soup.

ok here's my moms recipe:

chop zucchini anyway you like ,get a skillet pour olive oil ,tumeric powder ,salt, pepper ,chop onions and mince garlic then brown them in the oil till the onions are see through .next add the zucchini and cook them until tender,do not cover because they let out a lot of moisture .

oh and im not so sure about the seasonings but i know that those are the key ingredients .

enjoy them with pita bread .
