Cool we served this at a local mom and pop. For the baseball size ones its easy. Bagged shredded potato, thawed. Golf ball sized ball of cheese. Wrapping enough potato around the cheese to make it Baseball size and packed tight, and I mean tight. Then thoroughly chilled under damp towel. Now for the size your talking about. If you shred your own potatoes don't rinse them. That gets rid of the starch that helps bind them. Add in a little corn starch to the potatoes to help with binding, say about half a tablespoon per pound of potato. Form them up. And the trick is something like how they make tater tots is to partially freeze them first before frying.

Yes they are right you definitely have to batter them there is no way potato will stay together wrapped around something hard enough to make potato pancakes and have them stick together. Dip in egg flour or crumbs, egg again and flour/crumbs. Hope fully they are deep fried so that way they are surrounded in oil.

How about rolling your cheese in some cornstarch, then dipping it in an egg wash before you roll it in your shredded potatoes? Also, mix some seasoned bread crumbs into your potatoes to bind them together. Let me know how this works if you try it!

I say, add a bit of cornstarch or flour. Also, be sure to squeeze out as much moisture as possible from your shredded potatoes. Good Luck !
