Can you please tell me the names of the twelve most significant angels, and what they symbolize? Or the six pairs of angels? The only one i know is Michael paired with Gabriel.

I believe you're referring to the choirs of angels? They are as follows grouped accordingly:
Seraphim, Cherubim, Thrones, Dominions, Virtues, Powers, Archangels, Principalities, and simply "Angels" which are the closest to humans according to their "job" so to speak.
Each choir has their own "jobs", so to speak and you can learn more about them via Catholic websites. EWTN.com might have it.
I'm ex-Catholic and not really sure what EWTN has on their site anymore, but any Catholic site worth it's "salt" should have info for you.
