what r ur favorite kinds of salads? wanna share any recipies may b? my favorite is a fresh green salad with mixed in fresh spinach leaves and grilled chicken on top

i work at a salad place, "doc greens" there are like 12 different types of salds on our menu

Chicken Waldorf Salad

Salad for 1:

Ingredients

1 1/2 cups spring mix salad
1/5 medium granny smith (green) apple, chopped
10 red crunchy grapes, halved
8 candied walnuts, crumbled
2-3 tbsp Gorgonzola cheese, crumbled
4 oz grilled chicken, chopped
2 tbsp balsamic vinaigrette

Toss all ingredients together in a large bowl and serve.

I LOVE this salad. It is absolutely delicious. If you don't feel like making it, then just go to California Pizza Kitchen, they have this salad there. It is their most famous salad.

The Canilis Salad

1 cup Bacon
1 Egg
1 large head Romaine
1 Lemon
1/2 cup Croutons
1/2 cup
Olive oil
1/2 teaspoon
Freshly ground pepper
1/4 cup Green Onions
1/4 cup Romano Cheese
1/4 teaspoon
Oregano
2 tablespoon
Mint
2 Tomatoes

Into a large bowl place the tomatoes, cut in eighths. Add the Romaine, sliced in 1-inch squares. Then add green onions, cheese, bacon, oregano and mint. To make the dressing, put the pepper, lemon juice and coddled egg in a bowl and whip vigorously. Then slowly add olive oil, whipping constantly and tasting as you do. Pour over salad and toss thoroughly. Add croutons and a sprinkle of Romano cheese last. Serves four to six.

My favorite is a spinach and orzo salad. It's just 1 cup of orzo, boiled off. Half a bag of fresh spinach, some toasted pine nuts, a can of drained and rinsed garbanzo beans, a lemon vinaigrette, and crumbled feta. (Really, you can add more or less to this, sometimes I use mushrooms or sun-dried tomatoes.)

My lemon vinaigrette:

1/3 cup olive oil
Juice of 2 lemons
Zest of one
Big spoonful minced garlic
Big pinch of dried oregano
Kosher salt and fresh ground pepper (it's great if you grind your own 4 peppercorn mix)

Shake well and dump on the salad!

4 cup house salad blend fresh, chilled
1/4 cup julienned red onion 1/4" by 2"
1/4 cup julienned carrots 1/8" by 2"
1/2 cup crispy noodles
1/4 cup drained mandarine oranges whole segments
6 x julienne red peppers 1/4" by 2"
2 tbl prepared honey walnuts
3 x tomato wedges 8th cut
1/4 cup blue cheese crumbles
2 tbl sour cherries
3 tbl julienne cucumbers 1/8" by 2"
2 oz honey lime dressing on side
1 x bread stick warm

Place salad greens in center of plate. Do this using small mounds and fluffing to make the salad as high as possible. Do not spread and flatten around the plate. Evenly distribute onions, carrots and noodles over salad greens.

Evenly distribute the oranges, julienne red pepper, then the walnuts over the salad mixture. Place the tomato wedges at 10:00, 2:00 and 6:00 on plate. Top salad with blue cheese crumbles and sour cherries, place the julienne cucumbers in three equal mounds between each tomato wedge.

Place dressing in ramekin and place at top right rim of plate. Place bread stick on right rim of plate.

"This Cobb salad has some of my favorite ingredients: chicken, egg, tomatoes, blue cheese and avocado."

Original recipe yield:
6 servings

SERVINGS About scaling and conversions

INGREDIENTS
8 slices bacon
3 eggs
1 head iceberg lettuce, shredded (I use romaine)
3 cups chopped, cooked chicken meat
2 tomatoes, seeded and chopped
3/4 cup blue cheese, crumbled
1 avocado - peeled, pitted and diced
3 green onions, chopped
1 (8 ounce) bottle Ranch-style salad dressing
DIRECTIONS
Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Divide shredded lettuce among individual plates.
Evenly divide and arrange chicken, eggs, tomatoes, blue cheese, bacon, avocado and green onions in a row on top of the lettuce.
Drizzle with your favorite dressing and enjoy.

My favorite is one I came up with recently. I can't get enough of it:
Shaved fennel
Thinly sliced red onion
Crumbled ricotta salata
Toss it with a little balsamic vinegar, a teaspoon of mayo, salt and pepper.

And I like to copy the one from Cosi to make at home:
Mixed greens
Cucumbers
Carrots
Red grapes
Dried cherries or cranberries
Pistachios
Walnuts
Crumbled gorgonzola
Balsamic vinegarette

my latest favorite can actually be served as an entree...it is marinated kale salad

ingredients

handful of raw kale (cut into bite size pieces)
1 ripe Haas avocado (cubed)
1 small vidalia onion (chopped)
1 large clove garlic (minced)
1 Tbsp olive oil
1 Tbsp soy sauce
juice of half a lemon
Mrs. Dash (tomato basil flavor)
salt and honey to taste (optional)

Directions

Toss all ingredients together and let marinate for 30 minutes then serve. DELICIOUS!!
