After laying it on wax paper of parchment, turn up the oven to 350 and stuff the fish with fresh herbs and lemon. Cook it until the fish is nice and white/flakes well.
I like my tilapia with couscous or bulger. You can also make a fresh tomato and onion salad on the side as well.
Make sure your sides are light so they don't overpower the fish.

ASPARAGUS WITH HOLLANDAISE SAUCE
3 egg yolks
1/2 lemon, juiced
1 teaspoon cold water
1 teaspoon salt
1 teaspoon ground black pepper
1/2 cup butter
In a small bowl, whisk together egg yolks, lemon juice, cold water, salt and pepper. Melt butter in a saucepan over low heat. Gradually whisk yolk mixture into butter. Continue whisking over low heat for 8 minutes, or until sauce is thickened. Serve immediately.
Note: If your sauce breaks and the butter and egg begin to separate, simply remove from the heat, add a splash of cold water, and whisk very fast. This should save your Hollandaise.

My suggestions would be wild rice or rice pilaf and a steamed vegetable like asparagus or a colorful mix. You could also do a potato au gratin with salad. Add a nice dinner roll/bread and you're set.

I liked the steamed bean idea. I would so have that right now. you can cook some brown rice too, or some red potatoes. Steamed veggies sound good too, and they are healthy.
