Yummy Good Chili Recipe
This chili is really a combination of two recipes. I wanted something that was easy to prepare and did not take all day to make. This recipe does the trick. It has become a staple in our house!
Ingredients
1 pound ground meat of your choice (beef, turkey, chicken)
2 tablespoons olive oil
1 medium onion, chopped
1 red bell pepper, chopped
3 cloves garlic, minced or pressed
1/8-1/4 cup chili powder
1/2 tablespoon ground cumin
1 teaspoon dried oregano
1 teaspoon red pepper flakes
1/4 teaspoon cayenne
1 16 ounce can tomatoes (crushed, pureed, or chopped)
1 8 ounce can tomato sauce
1 15 ounce can black or dark red kidney beans, drained and rinsed
1 teaspoon salt
1 teaspoon sugar
Serves / Yields
Makes approximately 6 cups
Preparation Instructions
Combine the chili powder, cumin, oregano, red pepper flakes, and cayenne together. Mix well and set aside.
Heat oil over medium heat. Add the onions, peppers and garlic. Saute until the veggies begin to soften. Add the spices and cook stirring often for approximately 10 minutes.
Increase the heat and brown the ground meat, cooking until meat is no longer raw. Add tomatoes, beans, salt and sugar. Bring to boil. Reduce heat and simmer, covered, for approximately 1 hour. Add water if it gets too thick.
Helpful Hints
Serve chili over rice, topped with shredded sharp cheddar or monterey jack cheese. Sprinkle with green onions and top with sour cream.

Copy of Wendy's. Love their chili
1 onion, chopped
1 bell pepper, chopped
1 (14 ounce) can stewed tomatoes
4 (8 ounce) cans tomato sauce
1 (14 ounce) can ranch style beans
1 (14 ounce) can pinto beans
1 (14 ounce) can kidney beans
1 (10 ounce) can Rotel diced tomatoes
1 (1 1/4 ounce) package McCormick mild chili seasoning
2 lbs ground chuck
1. Brown Ground Chuck. Add all canned items, including juice, into large pot.
2. Cook until onion and pepper are tender.
3. Serve.
4. Freezes nicely!
I cook on low for about 3 to 4 hours. Best that way.

Here is one that my Dad found. Be VERY careful it can get out of control with the Jalapenos! But boy is it good!
El Cid Chili
• 2 tablespoons olive oil
• 2 pounds sirloin steak, cut into 1-inch cubes
• 1/2 pound ground beef
• 12 ounces chorizo sausage, casing removed, cut into 1/2 cubes
• 1 large yellow onion, coarsely chopped
• 1/4 cup chili powder
• 1 tablespoon garlic salt
• 2 teaspoons cumin
• 1 teaspoon dried basil
• 2 (14.5-ounce) cans beef broth
• 2 (14.5-ounce) cans whole tomatoes, drained
• 1 cup cilantro, chopped
• 1 cinnamon stick
• 3 bay leaves
• 2 green jalapenos, slit lengthwise 3 times each
• 1 tablespoon yellow cornmeal
• Salt and pepper, to taste
• Garnish with Cheddar and sour cream
Method:
Place oil in a large, heavy pot over medium heat. Brown the sirloin in batches. Remove to a bowl with a slotted spoon. Add ground beef, chorizo and onions to the pot and brown. Make sure to break up the meat. Return sirloin to the pot. Stir in remaining ingredients, except for garnishes. Cut three slits in each pepper from top to bottom but not all the way through to the bottom. Bring to a boil, reduce heat, and simmer for 2 hours. Stir occasionally, breaking up tomatoes. Before serving, discard cinnamon stick, bay leaves and jalapenos. Garnish, if desired

This is a vegetarian recipe - but you can easily add browned sausage or beef to it -
3 Bean Veggie Chili
1 28 oz can chopped tomatoes
1 28 oz can crushed tomatoes
1 family size can VEGETARIAN Bush's Baked Beans
1 12 oz can black beans
1 12 oz can red kidney beans
1 med - large onion
1 large green bell pepper
2 tsp italian seasoning (you can buy it or throw some of what you got in)
Dice peppers and onion... Add beans, tomatoes, seasoning and veggies to crock pot. Cook on high for 5 hours.
add chilli powder and tobasco to taste :) for a spicy kick 3 tbs chilli powder and 1 tsp tobasco!

Tempo makes a good spice mix for chili that you just add to your hamburger, beans and noodles.
