Okay, I don't get it. I've been baking moist, delicious brownies since the beginning of time, it seems! That's baking 101! 9 months ago, I moved from my home to my fiance's home. He has an electric stove and oven. I hate electric stoves, I've almost always had gas ranges. Anyway, I haven't been able to make a decent batch of brownies since I moved here! It's got to be the oven! Nothing else is different, just an electric oven instead of gas. I've tried leaving them in nearly to the point of starting to burn, but they are still too gooey in the middle, I mean needing-a-spoon-gooey! What can I do to make them turn out right? Serious answers only, please!

Get an oven thermometer and check the temp. Ovens can vary as much as 25 degrees F from what the dial says so if your old oven was running hot and your new cold (or vica versa) you might be trying to cook them at 50 degrees different than you are used to. If you don't have or want to get a thermometer, try adjusting the temp about 25 degrees up and/or down to see if that helps.

When you "moved", did your altitude change??? I'm NOT kidding, baked goods need different applications if you've changed your altitude radically.......Remember, here in San Diego (sea level) even water boils at a different temperature than it does in Denver (over a mile high).......but it wouldn't hurt to take Burt's suggestion, heck, I just got a NEW gas oven, and I had to have GE (their top line) come out and recalibrate it, as it was, get this 75 degrees off!!! And in the baking of brownies, that's a critical temperature difference.....and you can get one at the grocery store in the home goods section for about 10 bucks.......Enjoy!!

Hmmm. I have always had an electric stove and have never had any problem making brownies exactly at the temp and time called for. That being said they are different then gas. I would experiment with different types of pans. Glass, metal-non coated and metal coated. Try different sizes as well. Different size and type of pans distribute heat differently so if you experiment you should be able to find the right combo for your stove. When you get close, then start experimenting with the time and/or the oven temp. p.s. I use glass 8x8 pans.
