All the best airlines like Qatar or Singapore airlines cant just fly from usa to europe. They have to go through Dubai etc and the trip would take 30-40 hrs.

This is not completely correct. If an airline has the right to do so, it can operate outside of its country (but it may only have the right to carry transiting passengers, not to sell tickets.)

For example, Cathay Pacific sells tickets and operates between New York (Kennedy) and Vancouver, BC, as part of its service between New York and Hong Kong. Qantas operates flights (and sells tickets) for Vancouver BC to San Francisco as well, as part of its service between Vancouver and Sydney. This is what is known as the "fifth freedom" of air travel -- the right to operate a flight between two (non-home) countries as part of service to and from the home country.

Qantas also flies between Los Angeles and New York; however, they are not allowed to sell tickets on the route because it is not part of the Fifth Freedom. It's only utilized to carry passengers between New York and Sydney (with a stop in LA to pick up more Sydney-bound passengers). Therefore, Singapore would also be allowed to fly between the two if there were further service to Singapore, but they wouldn't be able to sell LAX-JFK tickets.

There are a lot of reasons why commercial airlines fly certain way, not necessary the shortest. It had to do with commercial arrangements, airport charges and other options. In your case it is beneficial to the Dubai to have passenger traffic through their airport so you can spend some money there and get some advertising even if it is not your destination. Thay hope that it may become one. They also like to have schedules more or less constant so they use curtain airports (hubs) to move the passenger between planes to keep level of occupancy high. It is true in domestic flights as well. If you fly Delta from NY to Raleigh SC then you will change a plane in Atlanta. Even it is furter but this is Delta hub and their flights arranged around it.

Airlines are assigned to routes by an International Board. Countries and airports control who flies in and out. Politics....

Well never had that problem. Lufthansa is 100x better than those airlines and I have no stops From Germany - Los Angeles
