The zodiac refers to a ring of constellations in the sky. Ancient peoples (like the ancient Babylonians and Chaldeans, and others) who were much closer to earth cycles and changes than modern people, felt that there was a relationship between the placement and movement of things in the sky and what went on in everyday life. Each constellation within the zodiac was prominent during a certain time of year and so had a certain relationship with the season and with persons born under the sign, etc.

Google, in under 3 seconds.
"The three major stages in the development of the zodiac were: (1) the establishment of 12 unequal constellations along the ecliptic, (2) the division of the ecliptic into 12 equal segments based on the 12 constellations, and (3) the division of the 12 equal segments into 12 equal tropical signs.
"The zodiac we have inherited is from the Greeks. There is no solid evidence that the Greeks possessed a complete zodiac until the 5th-century BCE. (We know the Greek zodiac was formalised by the latter half of the 5th-century BCE because the two Greek astronomers Meton and Euctemon both used it in their parapegmata (i.e., star calendars based on a division of the year into zodiacal signs)."

It comes from where the Sun seems to rise through the year. As we go around the sun it looks like it is moving through the different constellations, kind of like how your friend wold have different things behind them if you walked in a circle around them taking pictures.
Different cultures had different names for the 12 zodiac constellations and tended to have different images in their minds eye when looking at them.
China chose 12 animals( Rat, Ox, Tiger, Rabbit, Dragon, Snake, Horse, Lamb, Monkey, Rooster, Dog, and Pig) and labelled a cycle of 60 years with them. They are also the months of the year.
The set we use might have been formalized in Ancient Sumeria about 3,000 BC. It was likely put into its current form around 200 BC
Note again that it is Which Constellation the Sun Seems to rise in in the morning that defines the Zodiac months..

the zodiac is the narrative of Messiah in the stars.
When God created them and set them in the firmament of heaven, He said, in Genesis 1:14--
"Let them be for signs and for seasons."
Here the word "signs" is othoth (plural of oth, from the root to come). Hence, a sign of something or some One to come. In Jeremiah 10:2 Jehovah says, "And be not dismayed at the signs of the heavens, for the heathen are dismayed at them." The word "seasons" does not denote merely what we call the four seasons of the year, but cycles of time. It is appointed time (from the verb to point out, appoint). It occurs three more times in Genesis, each time in connection with the promised Seed--
Genesis 1:14 is therefore, "They (the sun, moon, and stars) shall be for signs (things to come) and for cycles (appointed times)."
