I love asparagus. I like to steam it for about seven minutes and serve it with butter. I also like to roast it, drizzed with olive oil, salt and pepper for about ten minutes at 400. Its also good cold, but cooked, with italian dressing and parmesan cheese. It is very heathy.

yes, you can roast it to bring out flavor or steam it, bake it, saute it. It is very healthy it has vitamins.

roasted
1 lb asparagus
1 1/2 tablespoons olive oil
1/2 teaspoon kosher salt (or 1/4 teaspoon regular table salt)

Not the one? See other Roasted Asparagus Recipes
Oven Roasting Side Dishes
Low Protein Side Dishes
preheat oven to 425 degrees F.
cut off the woody bottom part of the asparagus spears and discard.
with a vegetable peeler, peel off the skin on the bottom 2-3" of the spears (this keeps the asparagus from being all "stringy" and if you eat asparagus you know what I mean by that).
place asparagus on foil lined baking sheet and drizzle with olive oil.
sprinkle with salt.
with your hands roll the asparagus around until they are evenly coated with oil and salt.
roast for 10-15 minutes, depending on the thickness of your stalks and how tender you like them.
they should be tender when pierced with the tip of a knife.
the tips of the spears will get very brown but watch them to prevent burning.

baked
1 lb asparagus
olive oil
1 tablespoon toasted sesame seeds
salt and pepper
1 lemon
Break off ends of asparagus stalks.
Put in baking pan or dish.
Drizzle olive oil over asparagus (amount to liking)
Add salt and pepper to taste.
Spritz it with fresh lemon juice.
Finally, sprinkle sesame seeds on top of asparagus.
Bake at 375 degrees for (about 12 minutes-depending on thickness of stalk) or until fork tender.
Serve with lemon wedges.
Asparagus contains a good amount of vitamin A and is a fair source of iron and vitamins B and C.

asparagus is very healthy, i like getting really skinny asparagus becuase it is not so tough and marinade it in balsamic vinegar for about an hour then grill it, also baking it with fresh minced garlic and a good virgin olive oil is really good, if you don't feel like kicking it up just steam it for about 10 minutes

It's healthy. I like to do them two ways. Roasted: wash, dry, snap ends off. Put on baking sheet covered w/ foil, drizzle w/ 1 tablespoon olive oil, salt and pepper to taste and sprinkle one medium diced shallot over. Roast in preheated 425 degree oven for 15 minutes.
Pan steamed: Prepare as above, but don't dry. Melt 1 tablespoon butter in fry pan and toss wet asparagus in. Cover, cook over medium heat until tender, 10 minutes or until tender. Sprinkle w/ salt, pepper and freshly grated parmesan.

I love it! I'm having it tomorrow. I steam it and make a hollandaise to go over it. My husband likes grilling it with sesame oil and garlic.

So the asparagus itself is healthy, but not after we get done with it!

Love it! It is royalty among veggies. I prefer the younger, smaller stalks b/c they have sweeter, less woody flavor and texture.

Try this simple recipe for a simple, but elegant, appetizer:

Par-boil the stalks for about 2 minutes (this locks in the color). Drain and coat with a little EVOO and minced garlic and/or finely chopped onion. Grill or sauté for about 5 minutes, or until they are soft but not mushy. Wrap a couple stalks at a time with a little bit of prosciutto and serve.

Steamed, cut up in a salad, whole as a snack, stirrer for a Bloody Mary, very tasty and healthy. Can turn your urine green but not to worry.
