A proper jacket potato baked in the oven (NEVER microwaved) filled with tuna mayonnaise with a little bit of onion,then put a couple of big slices of a good cheese on top and put under the grill until the cheese melts and browns a bit.
For a jacket filling, you can't beat it!
TIP-bake the potato with a layer of salt in the bottom of the tray. It won't make it salty or increase your salt intake, but it will draw some moisture out of the potato and give you a deliciously crispy skin and a lovely fluffy centre.

Try cooking them in the oven and then make this and try it.

Fry some Red & Yellow Peppers, onion and button mushrooms in and little olive oil until soft.
Add some diced Smokey Bacon and a Tin of Chopped plum Tomatoes with the lid on the pan for approx 20 mins stirring occassionaly.
Take the lid of and fry for another 10 mins to reduce the liquid and then serve on top of your Jacket Potatoes.

First they have to be oven baked so you get that good crisp skin and then...eaten with a good cheddar, butter, pepper, salt or soy sauce, yogurt, beans or any combination of these. Just love jacket potatoes!

hmmmm. I never heard someone call it a jacket potato before...but I like mine laid flat on the plate with lots of butter and salt. I also like to eat it with roast. oh my....
