i have to make my best friend a cake for her birthday, cause im going to her house for dinner and i dont want to go empty handed. i thought i had everything..but i only hav e1 egg, and the cake mix recipe asks for three!! is there anything i can substitue with, or does anyone have a recipe using regualr flour, not cake flour, that i can use, with only one egg! please help! i need this cake in a couple of hours!!! thank u! i will choose a best answer!!

Here's an eggless cake receip~ Good Luck and have a great day.

2 cups flour
1 cup sugar
1/4 cup vegetable oil
1 cup buttermilk (see note)
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon almond extract
1/3 cup sliced almonds
1 tablespoon icing sugar

Place all ingredients except slice almonds and icing sugar in a bowl.
Note: If you don't have buttermilk, put 2 teaspoons of vinegar in the measuring cup and fill to one cup with regular milk.
Mix at low speed until all ingredients are moistened.
Scrape down bowl.
Turn mixer to high and beat for 3 minutes.
Pour into a greased and floured 9" by 13" pan and sprinkle with the almonds.
Bake at 350F for 30-35 minutes.
Sprinkle with the icing sugar. (I use my tea strainer to shake the sugar over the cake. Just put the sugar in the strainer and tap it.).

Which is made from eggs, sounds gross but it works and you can't taste it. It also makes the cake more moist.
Use one heaping teaspoon for each egg it calls for. So if you're using two eggs, use two big teaspoons full.

Mum′s Pumpkin Fruit Cake

! cup mashed pumpkin
1/2 cup sugar
1 tablespoon syrup
1 packet mixed dried fruit
some chopped dates and/or nuts
2 cups S.R. flour
1 teaspoon mixed spice
1 teaspoon vanilla essence

Mix ingredients well.If mix is a little dry add more mashed pumpkin.
Bake at 150 degrees C for approx 2 hours.



Health Cake

1/4 cup sugar
1 cup S.R. flour
1 cup mashed banana
1 cup shredded coconut
1 cup diced apricots (dried0
1 cup soy or rice milk

mix, cook at 180 degrees C for approx 1 hour

It's OK to use regular flour instead of cake flour.

The difference is gluten; regular flour has more of it. If you "work" regular flour too much, the gluten gets tough. That's wonderful if you want a bread that's light, airy, and chewy, but not so great if you want a dense rich cake.

So be careful not to mix the cake dough any more than you absolutely have to.

Eggs do a lot of things for your cake. The fat makes the cake moister, and you can use oil to accomplish the same thing, but the white is mostly protein, and there's no real substitute. Beg, borrow, steal, or buy some eggs from a neighbor, or thumb a ride to the nearest convenience store.

Your friend is lucky to have a friend like you. A store-bought cake is better than going empty-handed, but a home-made cake says "I love you" and a store-bought cake simply is sweet and pretty....

ONE EGG BANANA CAKE

2 c. cake flour
1 1/4 c. sugar
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
1/3 c. shortening
1 1/4 c. buttermilk or sour milk
1 c. mashed bananas
1 tsp. vanilla
1 lg. unbeaten egg

Sift dry ingredients in bowl. Add shortening, buttermilk, banana and vanilla. Add egg last. Beat 2 minutes. Butter and flour cake pan. Pour batter into pan. Bake 35 to 45 minutes at 350 degrees.

Really need to use 2 eggs..Just go t o neighbors and ask to borrow an egg!

It only takes 20 minutes to go buy a new carton of eggs. I'm sure you can do it in time, really. Good luck!

Go to the suppermarket and buy a plain sponge cake and decorate it your self etc put fruit on it, strawberrys, kiwi friutes and peaches. Also buy instant custard mix cut the sponge in half and fill it with the custard powder
