I like the tortilla chips idea. I often have cravings and do this with just cheese on top of them in the microwave.
A really simple but somewhat time consuming recipe is to take those cocktail sausages (actually, I prefer the beef cocktail baby wieners) and wrap them with a third of a strip of bacon, secured with a toothpick. Often the cocktail wieners are available at grocery stores 2 for five dollars and it will make two batches with a pound of bacon cut into thirds. Bake at 350 degrees for thirty minutes. Very easy but not really that quick. A variation of this is to sprinkle it with brown sugar. My boyfriend is diabetic so I don't do this but I take them to work with me all the time and no one complains that they aren't good!!!
I also do a very simple Velveeta recipe. One pound of Velveeta, one pound of sausage or hamburger, cooked, one can of rotel tomatoes ... put this all in a crock pot and heat until melted. Serve this with tortilla chips, Frito's, or crackers. Yum!

Layer tortilla chips with grated cheese, refried beans, more shredded cheese. Nuke in microwave til cheese melts. Serve with salsa. Yum.
