Okay, I'm in a dilemma here. I have a friend who knows I have become a priestess for the religion he and I believe in. He wants me to perform his handfasting ritual. The only problem is that I am not legally able to perform the ceremony and sign the marriage certificate. Anyone know how I can achieve this?

You have to contact your state or provincial authorities, and find out what their specific regulations are. Getting a quickie done online is not enough (my cat is a Reverend, as am I!).
Otherwise, contact your local coven. Maybe they've encountered this before.

It depends on the state/province and county. Some states have 1 day permits like above poster mentioned, some states allow you to be ordained on-line which takes a few days of "classes" and a nominal fee. You will have to be ordained through their religion but can perform the ceremony using any ritual you want. Other states only will allow you to be registered officant.

Call the registrar in your area and ask what the specific policies are. If it turns out they won't let you perform it then try and find an officant who will let you "share" in their duities and oversee the ceremony and still sign the certificate.

Speak to your local city hall and see if you can apply for a 1 day license to perform a marriage. I know some states allow this. Since you are a priestess, regardless of the religion, they should be able to give you info on how to legally perform a marriage ceremony. Good luck!
