You can use butter or margarine....and if you are looking to cut out the fat, use applesauce. Using applesauce will make the brownies more cake like, not chewy.

Applesauce is by far the best substitue - I believe that you use it measure by measure (so if the recipe calls for 1/2 cup of oil, use 1/2 cup of applesauce).
I also know some people who have used pureed baby food in place of oils - one of the best carrot cakes I ever had used pureed prunes in place of oil - it was awesome! I haven't tried that yet though!

This may sound weird, but if you puree prunes with a little bit of water in the blender and use that in place of oil, your brownies will turn out very moist - and the prunes won't affect the flavor at all.
