Probably German, because it is more structured, but some find French easier. I found them both about the same. I think the easiest language to learn for an English speaker is actually Italian.

I've taken both Spanish and Latin...Spanish starts out hard but it's similar to English in some ways and all you need to do is memorize stuff..

Latin starts out really easy but, I don't know. My teacher expected us to go through a chapter a week so I guess I felt it was difficult. I would ask people who have gone to your school who are older than you and ask what they took. And think about your future as well. I know that living in Florida near Miami I felt the need to learn Spanish. Do you want to go overseas to France? Germany? etc. It's up to you.

I would say in order of easiest to hardest-Spanish, French, German, Latin... why? Because Spanish has verb conjugations but so do the rest of them, and it's fairly regular and has no cases. French is like spanish with verb conjugations but has harder things like spelling and many irregular verbs. In german, you get verb conjugation AND cases which is like "conjugation" for nouns. And of all these languages, latin has the most in terms of conjugations, cases/declensions, and probably irregularities... it's also complicated by the fact that it's not spoken so vocabulary is really hard to learn.

They are about the same..Which one will be more practical?
Latin is the base language for English, Spanish, French, Italian..... but it's not a spoken language so not really practical
