Like the first responder stated, beef melt(pancreas) works great for crawfish and crabs. The downside is that it doesnt last because its soft and crabs tear it up pretty quick. I would use melt for crawfish, but I would use something more sturdy for crabs.I normally use chicken necks, almost as cheap and stays tied in your net better. The longer you leave it and let it get stinky, the better it works.
Dead fish always works too, but I think the chicken is better because its different than what they normally eat.

I can only answer for the Pacific Waters. The best crab bait is whatever you have available, as long as it is something a crab would eat....but... I'd always heard grwoing up that chicken made some of the best crab bait for crab rings on docks. It seems to work pretty good, and everyones got a freezer burnt bag of chicken in the fridge.
I also use Salmon heads and skeletons in Crab rings. Gives the crabs something to nibble on until you lift the ring.
For Crab pots, I use a mixture of anchovies and squid in the bait can. Seems to work.

i live on the water, so i usually crab for blue claws and green crabs in the NY area.
I like to use store bought bunker the first week the trap is in,
The next weeks, i use a mixture of dead killies and left over fish foods that i have.
You can use anything, personally i havent had success with raw chicken, but i have used a steak bone with alittle mean on it.

I prefer chicken, neck or legs. Yet bunker works. Also a killie ring. You pierce each killie through the mouth with wire. About a dozen killies will do. Then you latch the wire onto the middle of the cage.
