I have a pound of bluefish that I'd like to cook.

Super Summer Grilled Bluefish

INGREDIENTS
4 pounds bluefish fillets
1 cup orange juice
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1/4 cup olive oil
1 tablespoon dry white wine
kosher salt and ground black pepper to taste
1/4 cup citrus flavored seafood rub
DIRECTIONS
Place the fish fillets into a large bowl. Pour in the orange juice, lime juice, lemon juice, olive oil and white wine. Season with salt, pepper and seafood rub. Stir to blend and coat fish. Leave the squeezed lemon and lime halves in the bowl too. Marinate for at least 30 minutes.
Preheat a grill for high heat. When the grill is hot, oil the grate.
Place fish fillets on the grill, and discard the marinade. Cook for 4 minutes on each side, or until fish flakes with a fork. Transfer to a serving platter, and remove the dark blue part of the fish before serving.

Smoked Bluefish Pate

INGREDIENTS
1/2 pound smoked bluefish
4 ounces mascarpone cheese
2 tablespoons lemon juice
1 tablespoon prepared horseradish
1 teaspoon prepared Dijon-style mustard
1 pinch ground cayenne pepper
2 tablespoons finely chopped red onion
salt to taste
DIRECTIONS
Crumble the smoked bluefish. Place bluefish and mascarpone cheese into a food processor. Blend well using the pulse setting.
Transfer bluefish mixture to a medium bowl. Mix in the lemon juice, horseradish, Dijon-style mustard, cayenne pepper, red onion and salt.


Baked Bluefish

INGREDIENTS
2 1/2 pounds bluefish fillet(s)
1 (8 ounce) container herb-seasoned dry bread stuffing mix
1 1/2 cups boiling water
1/2 cup butter, melted
salt and pepper to taste
2 tablespoons butter, melted
1/2 cup minced onion
4 sprigs fresh dill weed
DIRECTIONS
Preheat oven to 500 degrees F (260 degrees C).
Trim all of the dark meat from the fillets. Rinse in cold water, dry and sprinkle with salt and pepper. Combine stuffing mix with boiling water and 1/2 cup melted butter.
Cover a baking sheet with a lightly greased double thickness of aluminum foil. Spread stuffing mixture on top of foil. Place fillets on top of stuffing. Brush fillets with 2 tablespoons melted butter and sprinkle with minced onions. Top with dill springs and crimp together edges of tin foil to seal.
Bake on center self of preheated oven for 10 minutes, reduce oven temperature to 400 degrees F (200 degrees C) and bake for an additional 60 minutes.

Ingredients for Bluefish With Apples And Mushrooms
1 bluefish
3 apples, peeled, cored, sliced
½ pound mushrooms, washed, sliced
1/3 cup water
2 tablespoons butter
Seasonings to taste

Put all ingredients in a baking dish.
Bake in moderate oven for about 20 minutes.
Then serve

Place the Bluefish on a wooden cutting board. Season with Salt and pepper, onions, garlic and parsley. Coat with flour. Then throw the bluefish away and eat the cutting board.
