There are two kinds of preserved cherries that are generally available. You're probably talking about marachino cherries they are very red, have a odd texture and are in a sugary syrup. The other kind are called morrello, they are a dark burgundy color and have a slight almond flavor although these are not usually put on top of sundaes.

Marachino cherries. They are preserved in juice in a little jar and sold in the drink mixer section of your grocery store. Sometimes you can find them in with the jars of fudge and butterscotch by the ice cream cones.
