I usually put a little cooked ground beef or pork sausage (breakfast kind) in my squash casserole!

How about making a Meatloaf? Or Salisbury Steaks?

I know you said you don't like hamburger, but I LOVE hamburger steaks when I eat squash. Shape the meat into patties and fry them in a skillet. When they are medium-well, remove the patties from the pan. Sprinkle some flour (mixed with S&P) onto the grease in the skillet. Whisk until the flour has browned, then add a little milk. Whisk constantly over medium heat until the gravy is thick and bubble. Return patties to pan. Serve patties over rice. Spoon gravy on top. MMMM!

You can serve it with fresh green beans seasoned with country ham and sliced ripe tomatoes. And for the ground beef, tear it all apart, put in a pot on the stove, and I know this sounds funny but cook it in soy sauce (or whatever sauce you like with your casserole) and sprinkle it on top of the casserole to add design to your meals! you could go to food network.com and find a recipe of ground beef that will go with squash casserole. personally I think you should incorperate the beef into the casserole. i would cook the beef before adding it to the casserole.

ps: go to recipes and cooking tab
