That they are not the "catch" you are. Basically if you are afraid to talk to them you are in essence putting them on a pedestal or else you wouldn't really be afraid of making a bit of a fool of yourself. Confidence is key. Talk yourself up in your mind if you have to. Take the mentality that you are doing them a favor by talking to them not the other way around. That kind of mentality.

focus on giving them good eye contact
honest - it helps a lot - and then listen.
in other words focus on them, instead of on yourself and your own feelings of inadequacy.
I've always been very shy myself, and it took me a long time to learn this.
it helps a lot if you like you, if you want them to like you.
the hot girls rarely get asked out, everyone's afraid to ask them out. it's true.
