I am trying to cook some frozen chicken thighs. I can't put it in my oven, because I got grease all in there bad the other day and still need to clean it. So I am trying to cook frozen chicken in a big pot stovetop. I was going to put cream of chicken or cream of something at least in there, b/c since they are frozen I dont' think they would cook well without something for it to simmer in. I can not find cream of anything in there except for cream of potato soup. I also have various tomato sauces, diced tomatos (but I don't think I want to go that direction unless it's my only choice), canned white gravy with sausage, condensed chicken noodle soup and various canned veggies and sourkraut (sp?). I do not see any broth, just canned soup. Oh, yeah, I also have beans in there and chilli, and peach pinaple salsa in the fridge. Can anyone help me do something here with my somewhat limited resources?

Hopefully you have some rice too and an onion - put 2 tablespoons oil in the bottom of a warm pan and bring up the heat add onion and cook until glossy place chicken in pot and reduce heat by half - cover and simmer for 20 minutes. After 20 minutes (hopefully the time it took to cook the rice) add peach pineapple salsa and recover - let simmer 5 minutes more then serve over hot rice.
Good Luck!

Actually, cream of potato soup tastes good with added meat and vegies, boil the chicken first in just enough water to cover it, then remove it from the bones, cut in bite size pieces and return it to the water it cooked in (which is now known as chicken broth), poor on the potato soup (without adding the traditional one can of water), add the vegies and maybe some seasoning like garlic or curry powder (sorry, I like curry powder in almost everything.)
Lots of other good answers here to, so pick the one that sounds yummiest to you! :-)

Boil them in some seasoned water. When they get to a point where the meat is coming off the bone, drain the water out of the pot, put the chicken in a big bowl and shred it. You can mix that with BBQ sauce and eat on buns or over rice. Or you can mix the shredded chicken with one of the Cream of whatever soups and serve over rice or even pasta.
Or mix it with the salsa.

Gently simmer in water with onions, etc. Drain and save broth and take the meat off the bones. You could mix this into anything. Pot pie with veggies and thicken with cornstarch or flour. Layer with chili and tortillas and cheese and the chicken for a fun "stack". Maybe fancy buritoes with that peach salsa. More chicken recipes on www.all-about-meat.com

Boil the chicken on top of the stove until it is thoroughly cooked through. Let it cool a little and either sprinkle it with some salt and pepper or some garlic salt as is or cut it off the bones and add it to one of your chicken based soups...if you have some bread or some crackers then enjoy those along with. Must be getting close to payday...huh??

boil them in some water with salt and pepper, they'll make their own broth, when they're done, take all the meat off the bones and either add it to the chicken noodle soup (use the broth from your thighs for the water) or if you have bbq sauce you could add that to the meat and make bbq sandwichs

certainly with a vengeance ol' pastime. incredibly finished casseroles etc. We had a kin of four toddlers and we the two worked, so it replaced into very a lot a case of "while you are going to prepare dinner, prepare dinner a lot" the only concern, rather with roast or fried chicken would be the replace in texture. do no longer attempt those, it does not come again too nicely.

I would suggest you just simmer them in condensed chicken noodle soup. Drain off the noodles if you don't want to use them.
