Should serve 10 as I can't cook proper in small quantities. The usual menu in my head is becoming boring. Have access to ethnic ingredients, beautiful appliances, Please suggest something that's your favorite meal. I can look up recipes, or you can contact my avatar with a favorite recipe, or here, no worries. Other info: love vegies, hate liver and lima beans. Otherwise, no culinary constraints.

Chicken Bake With Portabellini Mushrooms and Gruyere

6 eggs, beaten
2 cups milk
7 ounces white bread, crusts removed, cut into 1in cubes
3 1/2 ounces gruyere, grated
1 tablespoon flat leaf parsley, chopped
2 tablespoons vegetable oil
4 chicken breast fillets, cut into 1in cubes
9 ounces portabellini mushrooms, thinly sliced

Preheat the oven to 375F and grease a 1 quart baking dish.
Using a fork, lightly beat the eggs and milk together in a large bowl.
Stir in the bread cubes, 2 1/2oz of the cheese, the parsley and some freshly ground black pepper.
Leave to stand for 10 minutes while you prepare the remaining ingredients.
Heat half the oil in a large frying pan and brown the chicken for 4-5 minutes, then remove from the pan and drain on kitchen paper.
Heat the remaining oil and cook the mushrooms for 3-4 minutes, until just starting to soften. Drain on kitchen paper.
Stir the chicken and mushrooms into the egg and bread mixture, then pour into the prepared baking dish.
Sprinkle with the remaining cheese and bake for 30-35 minutes until risen and golden and the chicken is thoroughly cooked, with no pink meat.
Allow to stand for 5 minutes, before serving with some cooked carrots and steamed green beans
Serves 4 but you can easly double or triple this recipe.

Crispy Topped Macaroni and Cheese
Serves 4 but again this can be doubled or tripled
1 1/4 lbs macaroni
3 tablespoons butter
3 tablespoons plain flour
1 teaspoon mustard powder
2 1/2 cups milk
6 ounces sharp cheddar cheese, grated
1 ounce potato chips, crushed
salt
white pepper

Preheat the oven to 400°F
Use a large saucepan to cook the macaroni in lightly salted boiling water according to pack instructions. Drain carefully in a colander.
Melt the butter in another saucepan and stir in the flour and mustard to make a paste. Cook over a low heat for 1 minute, stirring all the time.
Slowly whisk in the milk a little at a time until smooth, then simmer the sauce until thickened.
Stir two-thirds of the cheese into the sauce, then mix in the macaroni and season to taste.
Transfer the macaroni cheese to a baking dish, scraping out all the sauce with a wooden spoon, then level the top flat.
Sprinkle over the crushed chips. Cover with the remaining cheese and cook in the oven for 20 minutes until golden and bubbling.

Pancetta and Parmesan Tart
This serves 6 But make two and you have more than enough, but it is so damn good it will fly off your table.
1 lb shortcrust pastry
7 ounces smoked pancetta, diced
2 cups heavy cream
2 large eggs
2 egg yolks
4 ounces parmesan cheese, grated
1 pinch dried chilies
salt & freshly ground black pepper

Preheat the oven to 400°F
Roll the pastry out on a floured surface and use it to line a greased 9in loose-bottomed tart tin. Prick the base, line with greaseproof paper and fill with baking beans, then bake 'blind' for 10 minutes.
Remove the paper and beans and lower the oven to 350°F
Cook the pancetta for 3-4 minutes in a non-stick frying pan and drain on absorbent paper: it will release a lot of oil.
Beat together the cream, whole eggs and egg yolks until well blended. Stir in the Parmesan, pancetta, chilli flakes and some black pepper then pour into the tart case. Bake for 25 minutes until just set.
Carefully remove the tart from the tin and cut into slices. Serve warm or cold.

1-pound loaf French or Italian bread, cut into cubes (about 15 cups)
3 cups milk
1/4 cup heavy cream
1/2 cup coffee-flavored liqueur
1 cup granulated sugar
1 cup packed light brown sugar
1/4 cup cocoa powder
1 tablespoon vanilla extract
2 teaspoons pure almond extract
1 1/2 teaspoons ground cinnamon
6 large eggs, lightly beaten
8 ounces semisweet chocolate chips

Preheat the oven to 325 degrees F.
Lightly grease a 13 by 9-inch baking dish. Place the bread in the baking dish.

In a large bowl, whisk together the milk, cream, and liqueur.

In another bowl, combine the granulated and brown sugars with the cocoa powder and mix well. Add this to the milk mixture and whisk to combine.

Add the vanilla and almond extracts and the cinnamon to the beaten eggs. Combine the egg mixture with the milk mixture and mix well. Stir in chocolate chips. Pour the mixture evenly over the bread cubes; let stand, stirring occasionally, for at least 20 minutes, or until the bread has absorbed most of the milk mixture. Bake the pudding for 1 hour, or until set; a knife inserted into the center of the pudding should come out clean. Serving the pudding warm, or refrigerate it and serve chilled.

Serve it warm or cold, with whipped cream or a dessert sauce.

Make a lot of potato salad. Fry some chicken drums or tights, maybe some beef patties, and some sausages or bratwurst, place on a large plate. Buy different kinds of bread and rolls. Place mayonaise, ketchup, mustard, diced onion, BBQ sauces, olives, pickles on the table. Let everyone serve themselves. Some good drinks....Cheers

This time of year my favorite thing is summer pasta. We have loads of "maters" fresh from my dad's garden. My husband and I grow our own basil. Put tomatoes, basil and fresh garlic in the Cuisinart. Pulse it with a little EVOO for a rough chop. Toss it with cooked angel hair pasta. Shred Parmesean over each bowl. Serve it with good french or italian bread and put out little bowls of balsamic and EVOO for dipping. If you have extra of the tomato mixture, put it out in a bowl with some slices of the bread. People can make their own brushetta.

You can toss the pasta with some grilled or sauteed chicken breast if you like.

My favorite comfort food is actually Indian food, I like most of the dishes but especially like palak paneer with a side of Rajmah dal, flat bread, and basmati rice. Another good one is corn bread with chilli and colored greens. I couldn't decide between those two as my favorite comfort foods.
