Baked Tilapia and Fresh Spinach
Serve this easy and tasty baked tilapia dish with a rice pilaf or baked potatoes.
INGREDIENTS:
4 to 6 tilapia filets
cooking spray
8 to 12 ounces baby spinach, cleaned
1/4 cup chicken broth
1/4 teaspoon onion powder
salt and pepper
Creole seasoning blend
1 small tomato, chopped
4 green onions, thinly sliced
PREPARATION:
Spray a 9x13-inch baking dish with cooking spray and add the spinach. If necessary to make the spinach fit it into the baking dish, steam or saute the spinach for a minute or two to wilt slightly.
Sprinkle spinach with salt and pepper and onion powder; add the chicken broth.

Sprinkle tilapia filets lightly with salt, pepper, and Creole seasonings. Arrange the filets over the spinach and sprinkle with chopped tomato and sliced green onion. Cover the baking dish with foil and bake at 350° for 25 minutes, or until fish flakes easily with a fork.
Serves 4.

SOmeone once told me to soak it in 7Up and roll it in some flour, then fry it or bake it. But I don't recall the exact directions, including how long to cook it. Sure is good, though

Tilapia Lemon Parmesan

2 1/2 pounds tilapia fillets
4 teaspoons butter, softened
2 teaspoons fresh lemon juice

Sauce:
1 cup mayonnaise
2 tablespoons fresh lemon juice
1/2 cup grated Parmesan cheese

Garnish:
2 lemons, sliced
fresh parsley

Mix sauce ingredients in a small bowl. Set aside. Rinse the tilapia fillets in cold water and drain thoroughly. Top with butter or margarine and lemon juice. Broil about 4 inches from the source of heat for approximately 5 to 6 minutes or until the fish is opaque and flakes easily when tested with a fork.

Top each portion with 1 to 2 tablespoons of sauce; broil 2 to 3 minutes or until sauce puffs and turns golden brown. Place fillets on serving plate; garnish with lemon slices and fresh parsley.

7 ounces tilapia fillets (1 fillet per serving)
1/2 teaspoon lemon juice
2 tablespoons olive oil
5 sprigs thyme (5-10 cm each)
1 garlic clove, crushed
1/2 onion, sliced
salt, to taste
pepper, to taste

Drizzle lemon juice over Tilapia fillet. Salt and pepper to taste.
Heat oil in a pan. Add thyme and garlic.
Roast fillet on medium high heat on each side for about 3 minutes. Do not overcook.
Remove fillet from pan and drain on paper towels.
Add onion slices to pan and cook until soft for about 1-2 minutes.
Serve fillet with onion slices.
NOTE: Can easily be adapted for more than 1 serving. Just increase the amount of ingredients to your needs, but use as less oil as possible and do not use more than 8 sprigs thyme and 2 cloves garlic for one pan.

6 tilapia fillets
2 tablespoons olive oil
1 tablespoon fresh thyme or 1 teaspoon dried thyme
3 tomatoes, peeled,seeded,and chopped
1/2 cup chopped green olives
1 dash hot pepper flakes
2 cloves garlic, minced
1/2 cup finely chopped red onions
1 tablespoon lime juice
salt and pepper

Place fillets skin side down in single layer in a greased shallow baking dish.
Mix together remaining ingredients; spoon over fillets.
Bake at 400 degrees for 15 to 20 minutes or until fish flakes easily.

try this one..

Tilapia

14 ounces tilapia fillets
1 teaspoon dried oregano
2 teaspoons chili powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
2 tablespoons butter
3 tablespoons lemon juice

Combine oregano, chili powder, cayenne pepper, and salt.

In a shallow bowl combine the melted butter and lemon juice.

Dip fish into butter mixture,then press into the spice mixture.

Place in a shallow casserole sprayed with non-stick cooking spray.

Bake at 450 degrees for about 15 minutes, or until fish flakes when pressed.

Sure do, we eat Tilapia in my household about twice a month. I get the Grill mates Garlic, Herb & Wine (green color packet) seasoning marinade. It calls for vinegar and instead of using regular vinegar, we use Balsamic Vinegar, I think it gives it an extra kick.

I put the tilapia and the marinade in a plastic gallon bag to marinate for about a half hour in the fridge, then put it all in a 9x13 pan and bake at 350 for about 12-15 minutes until it is white and flaky. VERY GOOD! Serve with something like steamed broccoli or sauteed zuchini and wild rice. I hope you like! :)

Cajun blackened tilapia:

Seasoning:
1/4 c cayenne pepper
2 T each paprika, black pepper, white pepper, onion powder, garlic powder, oregano, thyme, basil

Mix and place in a spice container. This will make enough for several dinners.

Heat a cast iron frying pan or other thick-bottomed, not-nonstick pan on high heat for 10 minutes. Brush both sides of tilapia filets with olive oil, salt to taste, and very generously sprinkle both sides with cajun seasoning.

Once the pan is REALLY hot, place filets in pan, however many you can fit in your pan and have room for flipping. Fry until well-browned/blackened, anywhere from 1 to 3 minutes, depending on how hot your pan is. Flip, fry the other side until blackened, and fish is flaky. That's it!

Spicy and delicious! Really easy and fast too.

I fry up some preminced garlic, from a jar, with some butter, and a little white wine. I then place it over the tilapia with a few pats of butter, lemon juice and more white wine.

Bake in oven at 350 for about 20 to 25 minutes until flaky. Yum, Yum, Yum, Yum, Yum!!!!

I cook it the same way I would cook any pan fish. It is delicious!
Dip it in egg and then Italian bread crumbs, salt pepper, your favorite spices (try hot salt if you like spicy) and fry in olive oil or vegetable oil. Cook all fish until it starts to flake with a fork, no more. After that it is overcooked. (remember it still is cooking after you take it out of the frying pan.

soak it in milk, remove, toss in a casserole with a can of spicy crushed tomatoes, salt and pepper, maybe some herbs, cover with sliced lemon. or something. bake it.
