Digital Photograph Review has a good feature on the E-510, with a summary of the differences between it and the E-410. I enclose it as a source. Most of the differences are minor, including "dedicated buttons for WB, ISO, Metering and AF mode" and "finer, customizable EV steps". The E-510 also has a chunkier handgrip. The most significant difference is that the E-510 has sensor-shift image stabilisation, which is described in positive terms (the reviewer was taking sharp shots at 1/20th of a second). This is built into the camera, as in the case of Sony's Alpha, so it'll work regardless of which lens you put on the front. Whether that's worth the $100 price difference is up to you.

In my opinion, the 510 is a much better camera, and well worth the extra $$.
Different sensor, IS, better LCD, etc.

E510 has 10 meg (vs 8 meg E500), live view, anti-shake
E500 doesn't have live view or antishake
