We don't believe in god. So...

I'm not sure this even applies to Atheists, as we don't believe in God's existence; hence, there's not much point debating what God would or would not do. But if we are going to explore the subject, then I don't see why 2 choices is bad. You either get it right or you get it wrong. Simple, clean and easy. That's an efficient God, if nothing else.

Atheists do not believe in god, period.

There is no choice. you live and exist, then you die and cease to exist.

Care to provide some sort of evidence that this is not true?

Atheists don't consider either of those as options, hence the atheism.
