I work at a grocery store and lots of people buy plantain bananas, but I would love to know what they're used for. I read that they're ripe when they're yellow, but they're always green when people buy them. i'm confused.

if they aren't all the way ripe yet, boil them and eat them with your food (good if food has lots of sauce). when they are really ripe, like brown, cut them and fry them with a little salt. you can also slice them thin and bake them for chip like. yummmm i love plantains!!!!

be careful when peeling, use a knife and soak in water. they have a sticky tar type stuff that gets all over your hands and doesn't come off with soap

I included some websites with recipes. It's hard to peel the green ones, but I find the work worth it. I like fried plantains with anything I'd normally have home fries or potato chips with.

People also slice the green ones and fry them in oil, smash them and fry them again and they're called "Tostones". They taste like potatoes. Then when they are ripe, people slice them fry them and they're called "Platanos Maduros". The Plantain are used as a staple much like our potatoes are. They are really really good.

Yellow ones are sweeter in flavor.

Plantains can be kind of like a potato where it has a neutral flavor or texture when they are underipe.
