if they aren't all the way ripe yet, boil them and eat them with your food (good if food has lots of sauce). when they are really ripe, like brown, cut them and fry them with a little salt. you can also slice them thin and bake them for chip like. yummmm i love plantains!!!!
be careful when peeling, use a knife and soak in water. they have a sticky tar type stuff that gets all over your hands and doesn't come off with soap
