Do you have a crockpot?

Crockpot Brown Sugar Chicken

2 lbs boneless, chicken pieces (I use breasts)
1 c. packed brown sugar
2/3 c. vinegar
1/4 c. lemon lime soda (Sprite)
2-3 T. minced garlic (I used 3 cloves)
2 T. soy sauce
1 t. black pepper

Place chicken in Crockpot. Combine remaining ingredients, pour over chicken. Cover, cook on low for 6-8 hrs.

Serve over rice or noodles.

To thicken sauce, combine 1 1/2 T. cornstarch with 2 T. of water and add to the Crockpot, cook on high for 30 minutes longer.

Easy Crockpot Beef Roast

1 chuck or rump Beef Roast (sized for your crockpot)
1/2 Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix

Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best).

It makes great tasting gravy too, that tastes like you browned it and simmered it all day on the stove.

Chicken Scampi
(easy but delicious and elegant)

1/2 cup butter
1/4 cup olive oil
1 tsp dried parsley
1 tsp dried basil
1/4 tsp dried oregano
3 cloves garlic, minced
3/4 tsp salt
1 Tbsp lemon juice
4 boneless, skinless chicken breast halves, sliced lengthwise into thirds

In a skillet heat the butter and olive oil on medium high heat until butter is melted. Add parsley, basil, oregano, garlic and salt and mix together. Stir in lemon juice.
Then add chicken pieces and saute for 3 minutes or until white. Lower the heat and cook for about 10-15 mintues or until chicken is cooked through. More butter can be added if needed. Serve chicken over hot angel hair, or other pasta and pour some of the sauce over it all.

Make sure you have some bread to 'sop' up the sauce! This is really good and so quick and easy, but it has a nice presentation on the plate.

Creamy Chicken and Noodles
Prep: 10 min., Cook: 15 min.

1 (0.6-oz.) envelope Italian dressing mix
1 (8-oz.) package wide egg noodles
2 tablespoons butter, softened
3 cups chopped cooked chicken
1 cup whipping cream
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley

1. Remove 1 Tbsp. Italian dressing mix from envelope, and set aside; reserve remaining mix for another use.
2. Cook noodles according to package directions; drain well, and return noodles to pan.
3. Stir in 2 Tbsp. butter, and toss to coat. Stir in chopped chicken, next 3 ingredients, and 1 Tbsp. dressing mix. Cook mixture over medium-high heat, tossing to coat evenly, 5 minutes or until thoroughly heated. Serve immediately.
Yield: Makes 6 servings

VARIATIONS:
1. Chopped Ham and Peas: Stir in 8 oz. diced ham and 1 cup thawed frozen peas.
2. Southwestern Style: Omit Italian dressing and Parmesan cheese. Stir in 1 (10-oz.) can diced tomatoes and green chiles and 1⁄2 cup (2 oz.) shredded Mexican four-cheese blend.
3. Italian Style: Add 1⁄4 cup diced sun-dried tomatoes and 1 cup turkey pepperoni slices.

Don't panic. As this dinner is so important, buy a couple of sirloin steaks. Sprinkle salt and pepper on both sides and lock the cat and the dog outside then leave the steaks on the kitchen counter. Buy baking potatoes ( They are large ) Just wash them well and leave the skin on and bung them in a oven at medium heat for 30 mins. See if they are done and then split them partly and brush them with butter and fill cottage cheese in the cut you have made. Then bake again on low heat. Peel 2 small onions and cut into two. Do the same with two tomatoes. Fry the onions and the tomatoes along with the steaks in a pan. Don't be afraid to taste as u go along. You can also add a dash of red wine. Best of luck

CHICKEN BASIL PASTA- ENJOY!


Ingredients

Serves 4
1 1/2 pounds chicken cutlets, cut into long strips
Coarse salt and ground pepper
6 teaspoons olive oil
2 garlic cloves, minced
1 can diced tomatoes in juice
1 pint cherry or grape tomatoes, halved
1/2 pound linguine
1 1/2 cups lightly packed fresh basil leaves, torn into small pieces

1-season chicken with salt and pepper. In a large skillet, heat 4 teaspoons oil over high. Add chicken, sautee untill golden.

2-Make sauce: To the same skillet, add remaining 2 teaspoons oil and garlic; cook over medium heat for half a minute. Add canned tomatoes and their juice, along with 2 cups water; bring to a boil. Reduce heat; simmer, stirring occasionally, until tomatoes have softened and are saucy, about 15 minutes. Remove sauce from heat; stir in cherry tomatoes.

3-Meanwhile, in a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain; return pasta to pot. Add tomato sauce, chicken, and basil; season with salt and pepper, and toss.

INGREDIENTS
1 (8 ounce) package egg noodles
1 pound ground beef
1 (10.75 ounce) can fat free condensed cream of mushroom soup
1 tablespoon garlic powder
1/2 cup sour cream
salt and pepper to taste
DIRECTIONS
Prepare the egg noodles according to package directions and set aside. In a separate large skillet over medium heat, sauté the ground beef over medium heat for 5 to 10 minutes, or until browned. Drain the fat and add the soup and garlic powder. Simmer for 10 minutes, stirring occasionally. Remove from heat and combine the meat mixture with the egg noodles. Add the sour cream, stirring well, and season with salt and pepper to taste.

QUICK GOULASH
INGREDIENTS:

* 1 pound ground beef
* 1/2 -1 Chopped onion
* 1-2 Chopped green peppers
* Salt and Pepper to taste
* 1 can tomato sauce
* Cooked macaroni (about 8 ounces dry)
* Shredded cheese

PREPARATION:
Brown ground beef; add chopped onions, green peppers, a can of tomato sauce, 1 can water, salt and pepper cook for about 15 minutes.

Add cooked macaroni and shredded cheese. Serve with some salad or maybe some green beans and you have a quick dinner.

CHEESY CHICKEN PARMESAN
RECIPE INGREDIENTS:
4 boneless, skinless chicken breasts (about 6 ounces each)
2/3 cup fine dry bread crumbs
1/3 cup freshly grated Parmesan
2 teaspoons dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon pepper
1 egg, beaten
2 tablespoons milk
1/2 cup flour
2 to 4 tablespoons olive oil for frying
3 cups pasta sauce
1 1/2 cups shredded mozzarella\a
1/3 cup freshly grated Parmesan
1. Rinse the chicken breasts under running water, then place them on a double layer of paper towels and blot them dry. (Be sure to wash your hands well in warm soapy water immediately after handling raw chicken; do the same for any cutting boards or utensils that the meat comes into contact with.)

2. Place 2 of the chicken breasts inside a large, heavy-duty plastic freezer bag. Partially seal the end of the bag, leaving a slight gap so air can escape. Using the smooth head of a tenderizing mallet or a rolling pin, pound the meat in even strokes, working from the center out (be careful not to tear the plastic), to a uniform thickness of about 1/3 inch. Repeat this process with the remaining chicken in a new plastic bag. Put the pounded cutlets on a plate and set them aside.

3. Combine the bread crumbs, Parmesan, basil, oregano, salt, and pepper in a shallow medium-size bowl. Stir them to mix. In a separate shallow bowl or pie plate, beat together the egg and milk. Set both of the bowls aside.

4. Spread the flour on a plate. Arrange the breading ingredients in assembly-line fashion in this order: cutlets, flour, egg mixture, crumb mixture, empty plate. Working one piece at a time, dredge both sides of the cutlet in the flour, knocking off the excess.

5. Dip both sides of the floured cutlet in the egg mixture.

6. Coat both sides of the cutlet with the crumb mixture. Set the breaded cutlet on a clean plate and repeat the process with the remaining pieces.

7. Set a large skillet over medium-high heat and pour in enough olive oil to coat the bottom of the pan, about 2 tablespoons. Heat the oil for 2 to 3 minutes, then add the cutlets. (If your pan isn't large enough to cook 4 chicken breasts at once, cook them in batches rather than overcrowd the pan.) Fry each side for 2 1/2 to 3 minutes, turning once, until the chicken is browned and cooked through. (To test, make a small cut in the center of the meat; there shouldn't be any traces of pink.) Remove the cutlets from the heat.

8. Heat the oven to 375°. Oil a shallow 9- by 13-inch baking pan. Pour 2 cups of pasta sauce into the pan. Add the chicken cutlets. Pour the remaining sauce over the chicken. Sprinkle the cheeses over the top, then cover the pan loosely with aluminum foil. Bake until the sauce is bubbly and the cheese is melted, about 20 minutes. Makes 4 servings.

Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.
